Tomato Salad with Feta, Olives, and Mint

Tomato salads, for me, typically include mozzarella cheese and basil. So, when I saw the recipe for a tomato salad with mint and feta, I was intrigued. I love any kind of cheese (except for the insanely stinky ones, which I just can’t get past the aroma), but feta is one of my favorites. I’ve all ready posted about The Best of Fine Cooking Fresh Fall 2008 issue, so if you haven’t run out and purchased it, you have no one to blame but yourself. It will probably go down as my most all time favorite issue. This recipe just increases the love. Really, feta, olives, tomatoes, mint…what’s not to love.

    That is a great looking salad, so bright and colorful! Late summer vegetables are so easy to work with. The tomatoes have so much flavor now that they taste good in almost any salad combination.

    I’m another huge fan of Fine Cooking, and I also made this salad and posted it when it first came out last September! I loved it too. What’s not to like about this combo?

    I am on business travel for the next two weeks straight (yuck) however, I am hoping that when I get home I still have some tomatoes on the vine because I have everything else ready to make this dish. Looks and sounds awesome!!
