Fish with Olives, Tomatoes and Garlic Scapes

Fish


You might want to sit down. I'm about to tell you something shocking. Are you seated? I cooked something without a recipe. Are you feeling faint..you might want to lean over and put your head between your knees, or whatever it is your supposed to do when you feel faint.

Don't worry, it was nothing to tricky or complicated. I got home from school on Friday, with no idea what to make, since I had planned on leftovers, but unfortunately being the pigs that we are, we had no leftovers. So, I had to wing it, people. I needed something that would defrost quickly. Easy choice, fish.

Then I was tired, cause it was Friday. So, I needed something easy and with as little clean up or prep as possible. Easy choice, fish in parchment. I raided the pantry and the fridge and found olives, sun dried tomatoes, garlic scapes, and some lovely orange olive oil that I found at Marshall's. Let's pause for a moment and think about how much we love the fancy food section at Marshalls.

I preheated the oven to 450. Took two sheets of parchment paper, and brushed them with some of the orange olive oil. I layered the fish, chopped Greek olives, chopped sundried tomatoes, and chopped garlic scapes. I drizzled a little olive oil over the top, salt and peppered it, contemplated going outside to snip some fresh herbs, decided I was too lazy, and closed up the pouches. Placed them on a cookie sheet and baked for 10 minutes. Served it over rice.

Go you! And now that you know you can do it (and not only do it, but do it well) I'll bet you'll be going recipeless more often. The fish looks great, you can't go wrong with sun-dried tomatoes and olives.

I wish we had a fancy food section at Marshall's.

There is no fancy food department in my Marshall's, and I am so jealous of you! I agree, fish is fast and easy, and you can dress it up so many ways! Great non-recipe, Pam!

Looks wonderful. Great idea to use the olives and sundried tomatoes on the fish. I will give this a try.

I have a TJ Maxx fairly close to home, and they have a little gourmet food section too, right next to the section where I often find incredible deals on pots and pans.

My desperation meals never quite end up being as blogworthy as that gorgeous fish! Thanks for the reminder about the deliciousness and ease of cleanup of fish in parchment. I've got some fish in the freezer too and some orange olive oil, and, well, thanks!!

Thanks! I found this while searching for monkfish and scapes recipes (!) I made it tonight w/o parchment paper but with the scapes and fresh tomatoes.
It was amazing. I would make more scapes next time- they were really good fried and crunchy. Great recipe!
