Cucumber and Watercress Salad


We all know that Tyler can do complicated. He can do pots and pans, and more pots and pans, and even more pots and pans. But I am here to tell you that, he can also do simple. And "simple" is my middle name. I used to say "easy" was my middle name, but I like the sound of "simple" better, don't you?

So, here you have a lovely, simple, and yes easy salad. Perfect for all those cucumbers your garden is producing. Not my garden (it has 3 lousy cucumbers which look extremely pitiful), but good for you green thumbers out there, or you CSA'ers like me.

Cucumber and Watercress Salad

I personally plan on working my way through all of the cocktails, it's a tough job, but someone has to do it. This will be my entry for this week's Tyler Florence Fridays.

Cucumber and Watercress Salad
Serves 4

1 large cucumber, peeled and diced
1 bunch of watercress, trimmed
1/2 cup chopped parsley
2 tablespoons honey
2 tablespoons white wine vinegar
Splash of water
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil

In a bowl, combine the cucumber, watercress and parsley.

In a separate bowl, combine the honey, vinegar, water and season. Whisk in the extra-virgin olive oil. Drizzle the dressing over the vegetables and toss to coat.

How refreshing to find a simple Tyler recipe! Not that I don't love his more complex dishes but sometimes you want something fast.

What a coincidence, Simple is my middle name too! My couple of cukes looked pregnant. I gave up on the cukes and will hope for better next season. Seems we had a lot of the same weather.

I am such a huge fan of watercress I am going to have to make this.

Also will have to look up who this Tyler man is, since you speak so highly of him. I am assuming I have not heard of him due to him not being in the UK?

Well, I don't know, "easy" has a connotation you don't want in a teacher, but do you really want "Mrs. Simple"? I don't do complex either. No meals that use every pan in the house for me!

One of my all time favorite salads! I like the vinaigrette used here; I normally just go with olive oil and lemon juice.

I agree that "simple" is a much better middle name than "easy". Ha-Ha!! Tyler deserves a big cheer for not producing a sinkful of dirty dishes. It looks delish!!

Simple is great! Especially in the summertime when it is hot and humid and all you really need is somethign refreshing. This looks like it does the trick!
