White Bean, Sausage, and Kale Soup

Kale soup

This is apparently formula week at Sidewalk Shoes.  Because once again, I am not actually giving a recipe, but a formula for the idea of a recipe.  Like pasta, soup is also an easy dinner to put together from this and that.  But like pasta, there are also some classics.  Some classic combinations that just go together. Like for instance:  white beans, sausage and kale.

Whenever I have kale, I make some variation of this soup.  It’s never the same, and it’s always good.  For this version:  some sausage (I used a spicy chicken, and again, I wish I would have used pork – this is the second time I’ve made this observation lately – so it’s pork from now on), white navy beans, kale, onions, celery, carrots, garlic, a few fresh bay leaves, a couple sprigs of fresh rosemary, and salt and pepper.  That’s it.  I dumped it all in the slow cooker (except for the kale) and went about my day.  About an hour before serving, I stirred in the chopped kale.

Good.  Simply good.

formula cooking is very smart, and the basis for most successful commercial kitchens, so you are just ahead of your time! I need to make this and more importantly use your dump and run style, it is successful. thanks.

Mmmmm. I love the combination of flavors and textures in the soup. Kale is my favorite soup ingredient.

Funny, I just found a few recipes for vegan sausage I want to try. And now I have a soup to try with those sausages, after I make them. This looks sooooo good.

would I use canned white beans of could I overnight soak dry white beans. (Elementary question, I know.)

You just described why soup is my absolute favorite thing to make. It's flexible and it tastes different every time.

Oh Pam, Pork is (nearly) always the way to go! ;-)

I have a kale soup I also love to make, easy, takes no time at all and it allows me to whip out my emersion blender! lol
