Wow. No clue. Some sort of green casserole, probably Mexican since it is served with beans and rice. Not a very attractive plate!

This is one of my favorite "what was it Wednesday" posts! It's hard to tell which one is the main, and which the side dishes!

Now that is a puzzler. And not a pretty one, either. I think the hardest thing to photograph is eggplant, which this resembles, sort of. It was my first thought anyway, as I just made an eggplant dish we all love but it takes the most ghastly photo!
Could it be chilaquiles with salsa verde? Funny how one thinks they can remember everything, but then cant!
I do believe it's something my dearly beloved would have handed back to me and requested oatmeal instead. You know he's a meat and potatoes guy.
