What Was it Wednesday? The eggplant edition.


I believe I should title this post, “Desperate Times Call for Desperate Measures” or “What to do When Your CSA Refuses to Stop Giving You Eggplants.”

Pickled eggplant

I vaguely remember this.  It is dated July 22, 2010.  It was some sort of pickled eggplant.  I had more eggplant than I knew what to do with.  I had already had it everyway possible.  I was starting to get teary-eyed when I even saw the color purple.  I remember that this pickled eggplant was actually not too bad.  But still.  This was a dark time and I do not wish to ever go back there.

    Haha ~ last year I had an over abundance of zucchini giving friends. I had is coming out of my ears! Maybe I should have tried pickling it!!

    Lasagne! That’s my solution for everything actually. Eggplant lasagne. Lovely. Come to think of it, I have a couple of favourite eggplant recipes that are delicious. Must say that the jar doesn’t look very appetizing to me. I’ll just stick to my solutions ;-)

    I cannot seem to figure out eggplant. I’ve eaten eggplant I’ve liked but I’ve never cooked eggplant I’ve liked. I tried several times this past summer but I have too much purple in my closet to risk getting to the point where I hate the color. lol!
