
I believe I should title this post, “Desperate Times Call for Desperate Measures” or “What to do When Your CSA Refuses to Stop Giving You Eggplants.”

I vaguely remember this. It is dated July 22, 2010. It was some sort of pickled eggplant. I had more eggplant than I knew what to do with. I had already had it everyway possible. I was starting to get teary-eyed when I even saw the color purple. I remember that this pickled eggplant was actually not too bad. But still. This was a dark time and I do not wish to ever go back there.

Haha ~ last year I had an over abundance of zucchini giving friends. I had is coming out of my ears! Maybe I should have tried pickling it!!

Lasagne! That's my solution for everything actually. Eggplant lasagne. Lovely. Come to think of it, I have a couple of favourite eggplant recipes that are delicious. Must say that the jar doesn't look very appetizing to me. I'll just stick to my solutions ;-)
Eggplant rocks my world...my post today was about eggplants, how funny. Never have had it pickled though.
You should have left it on neighbors' porches and in strangers' cars. I'm no fan of eggplant either.
I cannot seem to figure out eggplant. I've eaten eggplant I've liked but I've never cooked eggplant I've liked. I tried several times this past summer but I have too much purple in my closet to risk getting to the point where I hate the color. lol!
