
Raise your hand if you love fall! I know some people love spring, the whole first shoots of green popping up after a long winter sort of thing, but not me. It’s all about fall. Those first cool mornings offering a hint of things to come. At the very first smidgen of coolness, I immediately want to leap headfirst into fall. Boots, jackets, sweaters…and warm comforting soups and braises.
That is why I cannot begin to tell you how excited I was to make Apricot, Plum, and Chicken Tagine with Olives from Cooking Light Annual Recipes 2009: Every Recipe...A Year's Worth of Cooking Light Magazine
It was everything I wanted in my first fall dish. Warm and spicy. The house smelled divine. I used to keep all of my Cooking Light magazines, but I love the annuals. It is so much easier having everything all in one book.
The only thing different I did on the recipe was that I used bone-in thighs. So, to play it safe, I increased the cooking time by about 15 minutes.

Sounds similar to the chicken I made last week...a little sweet? It surely looks pretty. Thighs are my favorite part of the chicken.
so did you make this in a tagine? i've often considered getting one, and if it yields something like this every time, i think i've come up with my first christmas request. :)
