Smoked Trout Salad with Goat-Cheese Croutes

You want to know what I love?  I love a recipe that requires practically no effort on your part and comes out looking and tasting like something you’d get in a fancy schmancy restaurant.  Hello, Smoked Trout Salad with Goat Cheese Croutes from Fine Cooking. 

I love a salad for dinner, especially on a Friday night.  It gets me ready for the usual over-eating I do on a weekend.  The trick is finding a salad that leaves me feeling virtuous and hubby not staring at an empty plate five minutes later with his stomach still growling.  This salad is perfect.  My store didn’t have any smoked trout, but they did have some smoked mackerel.   So, it was a wonderful, fatty fish that gave that full, satisfied feel.  Then you have the creamy, tangy goat cheese, and the crisp bread.  It was truly delightful.  If you are wondering why my goat cheese has red flecks in it…the only goat cheese they had was rolled in dried cranberries.  While I think I would have preferred the plain goat cheese, this was still quite good!

I'm definitely much more inclined to eat salads and such for dinner than The.Boy. is so finding one that will satisfy him as well is a definite win!

One of my favorite salads calls for smoked trout, but my market rarely carries it. Smoked mackerel, you say? I want this for lunch. And dinner. It's still 100 degrees where I am.

My menfolk also want meat or fish for dinner. If I tried to feed them, say, stuffed tomatoes for dinner, I think they'd heave me outside and lock the door for days! This salad looks like a great compromise for when you want something fast and easy.

Ha! You had me until I read "goat cheese." Dang! I may have told you about visiting a friend that raised huge goats that evidently were in heat (or whatever). Not good.
However, we LOVE mackerel! Yep, it's fatty, and we don't have it too often, but, man, is it good.
