Baked Potatoes with Sausage and Arugula

I posted before about Mr. Sidewalk Shoes recent trip to Seattle.  Where I had to stay home, work, take care of kitty cats, and feed just myself.  Cooking for one is a challenge.  I wanted a sort of one dish meal.  I had already found Crispy Breakfast Pitas in Weeknights with Giada: Quick and Simple Recipes to Revamp Dinner and just a few pages over I found Baked Potatoes with Sausage and Arugula. 

The recipe says that it serves four, but I baked just two potatoes and was generous with the sauce!  And believe me the sauce is so good, you want to be generous with it.  I had this one night for supper and the next day I took it into work for lunch.   All the other teachers were commenting on how good it smelled, and it was good!  What I love about this is that it is basically a doctored up pasta sauce, but I love the addition of the arugula or spinach – a great way to get some greens!

    Paul travels for work. A lot. Taking care of the house, the kids, and the dogs without his help is exhausting…I don’t do big meals then. Baked potatoes like this are perfect! Or cereal. Cereal works, too.
