Chipotle and Rosemary Roasted Nuts

When the lovely people at Oh! Nuts  contacted me and asked me if I would like to try a few things for my holiday baking, I was sure they had me confused with someone else.   You know someone who actually bakes.  But I had actually just been browsing through Barefoot Contessa, How Easy Is That?: Fabulous Recipes & Easy Tipsand had marked Chipotle & Rosemary Roasted Nuts to try.

Seriously.  So, I told the lovely Oh! Nuts people that I would love to have some cashews and walnuts!!  And they said, “Okay, we’ll send them your way!”  I love them.

You know what I also love?  This recipe.  You don’t even dirty a bowl.  You pile all the nuts up on your baking sheet and drizzle and sprinkle all the fabulous glaze ingredients over them and toss.

And then you spread them out on your baking sheet.  Your kitchen is already smelling good!

And while they’re roasting you stir them a few times, so they don’t stick.  Because they are sticky.  Because they are covered in a mapley, brown sugary, chipotley, salty, rosemary glaze.  I know.

And when you are finished you have this gorgeousness.  As it cools, you have to stir it occasionally to keep them from clumping together.  And sometimes while your stirring it a few tumble out of the pan onto the counter.  Eat those.  They are your reward.

In all likelihood, as I was stirring, I'd just literally pick up the spoon and dump some on the counter. Then say OOPS!!! Mine. :P The rosemary chipotle flavor combo sounds awesome!

I had them send me pine nuts and pistachios...it just occurred to me that those are probably two of the most expensive nuts, although that was not my intention behind it. I used the pistachios in my thumbprint cookie dough...you got much more creative. Love that salty spicy combo :D

What I'm glad to see is that your baking sheets look a lot like mine; you know, a little old, a little tired, a lot loved.

Seriously, the nuts wouldn't last long enough to get used around here. My guys would be all over them!

We give nuts for gifts every year. I think I'll insert this recipe with them. It sounds really good.

I bet the whole house smelled heavenly while roasting these. Time to smoke some almonds!
