Roman-style Fettuccine with Chicken

I could never go low carb.  I can’t go a week without pasta.  Pasta is my secret weapon for not having to cook every night.  Every Tuesday I make a pasta dish and every Thursday, I reheat it for leftovers.  So, when I found Roman-style Fettucinne with Chicken in Everyday Pastafrom Giada DeLaurentis, I didn’t hesitate.

I was intrigued by the addition of the prosciutto and the white wine and tomato combination.

Turns out I had a good reason to be intrigued.  This was good.  Very good.  When you look at the pasta, it looks as if it is not sauced, and yet the tomatoes and white wine have flavored each and every strand of fettuccini.  The prosciutto added just a bit of salty pork flavor and the salty flavor matched the capers.

I don't know how any one can live with out carbs. But some people do it. Not me! This dish looks yummy!

Your first line made me laugh. My husband (which mean all of us since I'm not into separate meals for people) has been eating low carb since October. It is KILLING me! This dish looks super good. Balanced flavors, perfect sauce. And pasta. Pasta I miss so much. Pinning and wishing!

I agree, couldn't go low carb or vegetarian. I've got to have a hamburger now and then. This pasta dish sounds easy and delicious, heading over to look at the recipe. Happy New Year to your family and those adorable kitties.
