Sometimes you want fancy-schmancy and sometimes you want comfort in a bowl. A nice warm hug. This is it. Now, I know it’s spring for a lot of you and that means lighter eating, salads start popping up on the menu. But don’t rule out a wonderful bowl of this. I don’t know how it is where you live, but here – everything is covered in a heavy layer of yellow pollen. It’s everywhere. And with that brings watery eyes, sniffles, and sneezes. You are just as miserable as if you had a cold. And that spring time misery gets a big smack in the face with this big old bowl of wholesomeness.
Eagle eyes may recognize this chicken as the one I was making while wearing my much loved new Chef’s Emporium Coat! Just look at that chicken in my pot. Isn’t it lovely? Doesn’t it already make you feel good, just looking at it. I served this over some brown rice and felt loved.
I found the recipe in Nigella Kitchen: Recipes from the Heart of the Home but you can also find it online Nigella’s Praised Chicken so I won’t bother retyping it. The only thing I will do differently next time, is slice the leeks. I’d like them to almost melt into the sauce.
