Slow Roasted Tomatoes
The other morning, I got a text from Mr. Sidewalk Shoes saying that has he drove out of the subdivision for work, he saw a box of peaches on a neighbors car with grocery bags laying beside them. The universal sign for take them, they're free! I hurried up, got dressed and drove over, no make-up even. Free peaches is a serious matter that needs to be addressed immediately.
As you can probably guess from the nature of this post, they weren't peaches. They were tomatoes, roma tomatoes. Not as exciting as peaches, but nonetheless, I filled up a bag, leaving a few stragglers, to make it seem like I am not totally selfish.
I didn't even need them really. I all ready had some tomatoes from my CSA. But I wasn't about to let them sit out there in the hot sun, possibly going to waste. It was my civic duty, my tomato civic duty.
I decided to slow roast them and then freeze them, so that in the middle of winter, I could have them any number of ways - pasta, pizza, eggs, - you name it, slow roasted tomatoes make everything better!
I vacuum sealed them using my Food Saver and the FoodSaver Wide-Mouth Jar Sealer to get out the oxygen. And now I have this wonderful jar of summer tomato goodness just waiting for me in the freezer!
Slow Roasted Tomatoes
Instructions
- Preheat oven to 250.
- Cut tomatoes in half lengthwise and scoop out the seeds. Lay them in a single layer on a baking sheet, lightly coated with oil. Drizzle a little olive oil over the tomatoes and sprinkle with salt.
- Bake for 2-3 hours, or until they are soft and tender, with the consistency of dried prunes. The timing varies depending on how juicy your tomatoes are.
- Cool to room temperature and pack into a freezer jar or bag to use later, or refrigerate and use within about 5 days.

I LOVE sun dried tomatoes, despite the fact that I can't stomach "normal" tomatoes. I've never considered trying to make my own! Thanks for this recipe, and for sharing with us at DDT!! 🙂

Home sun-dried (slow-roasted) tomatoes in the middle of winter are going to be the best!
