This one-pot meal is sure to become a family favorite!
Kid-friendly, chef-friendly, delicious - what more could you ask for. Browned sausage, perfectly cooked rice and crisp tender broccoli.
Ingredients.
Italian sausage - you can use spicy Italian sausage to kick up the heat a little. You can also use chicken sausage to keep it a little lighter. I've made it with both pork Italian sausage and chicken and it was equally delicious!
Onion and garlic - you can also use leeks or shallots. I've also used the garlic paste that comes in a tube to make it even easier.
Rice - I typically use Arborio rice because it's a little creamier, but you can use regular white rice. If you substitute brown rice, you will need to cook it longer before adding the broccoli.
White wine and chicken broth - you want to use a white wine that you would drink. Do not use the "white cooking wine" that you find in the grocery aisle if you can help it, it does not have the same flavor as a drinking wine. Good chicken broth or stock is also necessary, homemade is best if you have it.
Broccoli - I've also made this with green beans! You could use cauliflower too!

I found this recipe in an old Martha Stewart cookbook, many years ago. I change it up a little every time I make it!

Sausage and Rice Casserole
Ingredients
- 2 tablespoons extra virgin olive oil
- 8 ounces Italian sausage casings removed
- ½ cup onion finely chopped
- 3 cloves garlic minced
- 1 ¼ cups arborio rice
- ¼ cup dry white wine
- 2 ¼ cups low-sodium chicken broth
- 2 cups broccoli rabe cut into ½ inch pieces or broccoli florets
Instructions
- Preheat oven to 400. Heat a large, ovenproof skillet (cast iron is perfect) over medium high heat. Add sausage, breaking it up and cook until lightly browned about 5 minutes. Add onions and garlic and continue cooking about 3 more minutes.
- Add the rice and stir until rice is coated. Add the wine and bring to a boil and cook until the rice absorbs most of the wine. Add the chicken broth and bring to a boil.
- Remove from the burner and place skillet in the oven. Bake for 10 minutes. Add the broccoli on the top and continue to back for an additional 10 minutes. Remove from the oven, stir and then let stand for about 10 minutes before serving.
