Did you know it’s Popsicle Week? It is! Over 100 of us bloggers got together to celebrate and you can see all the posts at Popsicle Week at Wit and Vinegar. I’m sure it comes to no surprise that I decided to do a boozy pop. I love getting my cocktails frozen on a stick. Just like meat and chicken always seems to taste better on a stick, so do cocktails. It turns cocktails into a grown-up treat. On Grey is the New Black yesterday I posted a Summer Thyme Cocktail, from my new favorite cocktail book, Zen and Tonic. I will be reviewing the book shortly, but I wanted to make three things from it before reviewing it. So, guess what I found? Yes, these boozy bourbon popsicles, which she calls Cocoa Blast.
Oh my peeps, these are so good and so easy. I wish I had gotten them up before Father’s Day, because these would have been perfect! No worries though, they are still perfect. These are rich and chocolately and actually kind of good for you. They are sweetened with dates, get a bit of tartness from dried cherries, antioxidants from cocoa powder (I use organic Raw Cocoa Powder), creaminess from coconut milk, and a warm grown-up flavor from the bourbon.
Really, I can’t insist enough that you make these. They are that yummy. I pretty much always have the ingredients in my pantry, so these are going to go in regular rotation at our house!! My only question with the recipe was that after blending all the ingredients, she states to add ice and blend again. There is no mention of how much ice. I added about a cup. The recipe says that it makes 2 pops, but I got six.
- 4 Medjool dates, pitted
- 1/4 cup dried, unsweetened cherries
- 2 tablespoons cocoa powder
- 1 cup coconut milk
- 4 ounces bourbon
- Place the dates, cherries, cocoa powder and coconut milk in a blender and process until creamy. Add about a cup of ice and blend again. Add the bourbon. Pour into popsicle molds and freeze for a minimum of 4 hours.
