Aperol Spritz Cocktail - an easy three ingredient cocktail that gets a festive flair from all the bubbles!   A favorite Prosecco cocktail with Aperol and club soda, so delicious and so pretty to look at!

Two glasses filled with a bright orange cocktail garnished with an orange wedge.

    What is Aperol?

If you haven't added Aperol to your bar, you need to.  It is an Italian apértif, made of gentian, rhubarb, and cinchona among other ingredients.

It has a gorgeous orange color and a unique bitter taste.  I love the flavor that it adds to cocktails.

You might notice that it looks a lot like Campari.  They are similar and I love them both.

Some consider Aperol a bit more approachable.   It has a lower alcohol content and a softer flavor.

So, when I saw that an Aperol Spritz Cocktail has only 3 ingredients, I knew that it would let all that wonderful Aperol flavor shine through.

An orange, bottle of Aperol, club soda and Prosecco.

    Ingredients in an Aperol Spritz

You only need 3 ingredients to make an Aperol Spritz! Well, four if you count the orange slice for garnish!

Aperol - as I mentioned in the paragraph above, Aperol is a bitter Italian apertif.

Club Soda - or sparkling water. We use our Soda Stream to make carbonated water.

Prosecco - an Italian sparkling wine.

    Orange - slice for garnish.

First two steps for making an aperol spritz, making the orange garnish and filling glasses with ice.

    Step by step instructions

After gathering your ingredients, begin by slicing an orange into thin slices. Then slice those in half so you have half moon shaped slices.

Fill a glass with ice and add the orange slice.

Two photos showing liquid being poured into cocktail glass.

Pour the club soda into the glass.

Add the Aperol to the glass.

Two photos showing liquid added to glass and then cocktail being stirred.

    Top the cocktail with Prosecco.

    Stir and enjoy!

Two cocktail glasses filled with a deep read orange cocktail.

We loved this cocktail! While it's super light and refreshing making it a perfect summer cocktail, we actually like it all year round.

I've even had it for New Year's Eve, the sparkling bubbles from the Prosecco make it festive! As the night went on, I just added a little more club soda to make it a bit weaker.

I first enjoyed this drink in Venice on honeymoon, so it's great to now have a reliable recipe to hand. It's delicious.

Aperol and Campari are owned by the same company I think.

I never knew what Aperol was. But now that I know rhubarb is a flavor I'm going to try it! I love a fancy drink that isn't complicated.

Sounds like a lovely way to celebrate new year! I too prefer prosecco, we discovered in on honeymoon in venice, as it's from that area.
