    Arugula Salad with Pears and Prosciutto

    Arugula Salad with Pears and Prosciutto - this salad is so easy and delicious! 

    Arugula, pears, prosciutto, Parmesan cheese, and walnuts! 

    Served with a slice of French bread with goat cheese it made a light and wonderful meal!   A healthy dinner on the table in about 15 minutes!

    Normally I am a month or two behind (and even a year or two behind) in recipes that I make and when I post them.  Which is why you'll sometimes find Thanksgiving recipes on my blog in January.  Not a good thing.

    However, a very good thing is this arugula salad.  We had it last week for dinner and we'll probably have it again soon. 

    It's that good.  That easy.  That delicious.  A lovely, healthy salad on the table in about 15-20 minutes.

    I served it with a slice of cranberry walnut bread, spread with some goat cheese and it was perfect.

    This salad is so easy to make!  Begin by toasting some walnut halves.  I do it in a dry skillet over medium high heat. 

    Do not leave the room, they go from perfect to burned in just a manner of seconds.  Once you start smelling them, give them a little toss and when they're ready take them off the heat.   Add them to a bowl.

    Slice the prosciutto.    Don't worry about trying to keep it even, it's almost impossible.  Add it to the bowl. 

    Cut a pear in half and remove the core.  Slice it thinly lengthwise and add to the bowl. 

    Grate or shave fresh parmesan cheese over the top and add the arugula. 

    Combine the dressing ingredients in a small bowl and whisk.  Pour over the salad and toss.

    Don't you love using fruits in salads?    I am always trying to find ways to increase our servings of fruits and vegetables and a salad is such a good way.

    This broccoli salad has bacon and cranberries.  Who can resist a Superfood Salad with Beets and Blood Oranges?  A long time favorite around here combines Salmon and Mango!

    We loved this pear salad.  Commented several times while eating it, how good it was.  The bitterness from the arugula paired beautifully with the sweet pears. 

    The salty prosciutto and the earthy walnuts.  A simple vinegar and oil vinaigrette.  Everything was just right.

    Arugula Salad with Pears and Prosciutto

    Easy, healthy salad that comes together in about 15 minutes!  Delicious!

    Ingredients

    • 10 ounces arugula
    • 2 pears cored, cut lengthwise into ¼ inch slices
    • 2 ounces prosciutto cut into thin strips
    • ¾ cup Parmesan cheese fresh grated or shaved
    • 4 tablespoons walnut halves toasted
    • 3 tablespoons apple cider vinegar
    • 2 tablespoons olive oil
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper

    Instructions

    • Combine the arugula, pears, prosciutto, Parmesan cheese and walnuts in a large bowl. 
    • In a small bowl, whisk together the vinegar, olive oil, salt and pepper.  
    • Drizzle the salad over the dressing and toss it gently. 

    Notes

    Almonds are also a good substitute for the walnuts.  
    If you want your prosciutto crispy, you can brown it before adding it to the salad.
