Baked Rice with Sausage and Broccoli
Well, guess what we did yesterday? Turned on the heat!! This is probably the earliest we have ever turned on the heat! I know it's going to warm up again, and we'll probably have to switch back over to air before it's all said and done. I had a photo shoot Saturday morning and it was in the 40's!! I had to scramble through my packed away boots and scarves and sweaters. Which reminded me of how much I love dressing in the fall. Jeans, boots, long sleeve t-shirt, sweater and a cute scarf and you are good to go.
Another thing I love about fall is hearty one dish meals! I don't think I would like living somewhere that didn't have seasons. It seems just as I am tiring of summer salads and light meals, cooler air flows in and it's time for rib-sticking stews and braises. I just got a new cookbook, which I'll be reviewing next week, One Pot: 120+ Easy Meals from Your Skillet, Slow Cooker, Stockpot, and More. Oh my goodness, I can not say enough good things about this book! I have already made 4 things out of it and each one has been wonderful. Simple, easy and tasty! The original title of the recipe is baked rice with sausage broccoli rabe, but I didn't have broccoli rabe so I substituted regular broccoli and it was wonderful.
Baked Rice with Sausage and Broccoli
Ingredients
- 2 tablespoons extra virgin olive oil
- 8 ounces Italian sausage casings removed
- ½ cup onion finely chopped
- 3 cloves garlic minced
- 1 ¼ cups arborio rice
- ¼ cup dry white wine
- 2 ¼ cups low-sodium chicken broth
- 2 cups broccoli rabe cut into ½ inch pieces or broccoli florets
Instructions
- Preheat oven to 400. Heat a large, ovenproof skillet (cast iron is perfect) over medium high heat. Add sausage, breaking it up and cook until lightly browned about 5 minutes. Add onions and garlic and continue cooking about 3 more minutes.
- Add the rice and stir until rice is coated. Add the wine and bring to a boil and cook until the rice absorbs most of the wine. Add the chicken broth and bring to a boil.
- Remove from the burner and place skillet in the oven. Bake for 10 minutes. Add the broccoli on the top and continue to back for an additional 10 minutes. Remove from the oven, stir and then let stand for about 10 minutes before serving.

Seriously this was so crazy easy and so warm and comforting. Nice and simple, just how I like my autumn meals. And besides, doesn't everything look better in an old cast iron skillet!

Oh wow! It got cold here a week ago (down to 55 degrees at night), but lately it's been warm again. Hello, 80's! I'm not sure that I'm ready for it to get cold again! Last winter was brutal for me! XD

I turned on the heat the other night for the first time too this season, Pam. I wasn't happy about it at all but, when I found Marion chattering over her cup of morning teas, I just had to give in.
Don't get me wrong, I like Fall, the clothes, the seasonings and yes the one pot comfy meals. I just wasn't prepared this year. Am I ever???
