    Slow Cooker Beef and Sweet Potato Chili

    Use your slow cooker to make this delicious beef and sweet potato chili!

    Ground beef, sweet potatoes, bell peppers, black beans and tomatoes simmer all day long for a delightful bowl of pure comfort food! Top with your favorite cheese and other toppings!

    Cooler weather means big bowls of chili, am I right?

    Not just any chili though, how about one filled with sweet potatoes and black beans?

    We have this sweet potato chili on regular rotation at our house all winter long, it's the perfect game day food! Just have it simmering in the crockpot and everyone can help themselves and use their favorite toppings!

    This is an old Cooking Light recipe that I've been making since 2016!

    Ingredients.

    I always keep these ingredients on hand, so I can make this chili anytime I want!

    Ground beef - if you bought it on sale and have extra try our Slow Cooker Pinto Beans.

    Sweet potatoes, onions, garlic and bell peppers - I used red bell peppers, you could also use green. Butternut squash would also work in place of the sweet potatoes.

    Canned goods - tomato paste, diced tomatoes, beef stock and black beans.

    Spices - chili powder, kosher salt, cumin and red pepper.

    Toppings - shredded cheese, fresh cilantro, pickled red onions, pickled peppers - whatever you like!

    Step by step instructions.

    Brown the ground beef over medium hight heat, breaking up the chunks with a wooden spoon for about 3 minutes.

    While the ground beef is browning, wash the sweet potatoes and cut into 1 inch cubes. You don't have to peel them, but you can if you want.

    Dice the bell pepper and onions and mince the garlic.

    Scoop the ground beef out of the pan and add it to the slow cooker. Add the sweet potatoes, bell peppers, onions, garlic, spices and tomato paste.

    Add beef broth and diced tomatoes to slow cooker. Rinse and drain the black beans and add them.

    Give everything a good stir, season with salt and pepper and cook on low for 7 hours.

    Serve with your favorite toppings.

    I hope you love this sweet potato chili as much as we do! It's so quick and easy to put throw together. The beef browns in the time it takes you to prepare the vegetables.

    Ingredients

    • 1 pound ground beef
    • 4 cups sweet potatoes cut into 1 inch cubes, unpeeled
    • 8 cloves garlic minced
    • 2 cups onion diced
    • 1 cup red bell pepper diced
    • 2 tablespoons chili powder
    • 1 ½ teaspoons kosher salt
    • 2 teaspoons ground cumin
    • ½ teaspoon ground red pepper or more to taste
    • 2 ½ cups beef broth
    • ½ cup tomato paste
    • 29 ounces canned diced tomatoes undrained, (two 14.5 ounce cans)
    • 15 ounces canned black beans rinsed and drained
    • Toppings - cheese and cilantro or whatever.

    Instructions

    • Brown the ground beef over medium high heat for about 3 minutes.
    • Scoop out beef along with the rest of the ingredients (except for toppings and add to slow cooker.
    • Cook on low for 7 hours.
    • Serve with toppings.

    Notes

    Toppings - cheese, cilantro, pickled onions, pickled peppers, sour cream - whatever!
