Black Bean Salad with Avocado Dressing
Anyone else a menu planner? I sit down on Wednesday mornings with the grocery ads and plan my menu for Thursday - Wednesday and create my grocery shopping list at the same time. Some mornings this goes quickly and some it's a struggle. I try to make sure we eat healthy, so I've made a little check list for my plan in Evernote.
It list the highlights that I want to make sure I hit every week: beans, grains, colorful veggies, seafood, and meatless. This easy healthy salad definitely goes on the list of my favorite salad recipes.
Healthy Meatless Salad
I love that this meal fills two of my categories - beans and meatless. Not only that, but it was wonderful! Mr. Sidewalk Shoes commented several times that we need to put this in regular rotation. Poor guy. He knows it's difficult to put anything into regular rotation when your wife has a food blog. Always searching for the latest and greatest recipes you know.
What totally makes this salad is the avocado dressing. Who knew avocado, cilantro, yogurt and a few other ingredients would be so incredible. I could have literally ate it with a spoon out of the jar! After reading several reviews of the recipe, I modified the dressing to have a different ratio of cilantro, the original recipe seemed really high on the cilantro.
Ingredients in this Southwestern Black Bean Salad
For the avocado dressing you will need: avocado, yogurt, cilantro, green onions, garlic, lime juice, sugar and salt.
For the black bean salad you will need:
Salad Greens - use your favorite. I find that romaine lettuce holds us well with the other ingredients.
Black Beans - homemade or from a can is fine. If canned, be sure and rinse them.
Corn - fresh or frozen. If frozen, thaw first.
Tomatoes - cherry or grape tomatoes look nice. If using bigger tomatoes cut them into quarters or wedges.
***Note this recipe makes one serving, it's very easy to size it up. It would also be perfect for meal prep.

Instructions
- Put the avocado, cilantro, yogurt, green onions, garlic, lime juice, sugar and salt in a blender and blend until smooth.
- Toss the salad greens with 2 tablespoons of the dressing. Arrange the black beans, corn and tomatoes on top. Serve with the dressing for a little extra drizzle and store the remaining dressing in the fridge.
