I love farro and am collecting farro recipes from everywhere! One of my favorite ways to use make a farro salad. Turn rotisserie chicken into a healthy and delicious grain salad with this Chicken and Sweet Potato Farro Salad.

Chicken and Sweet Potato Farro Salad
Just call me Queen of the Rotisserie Chicken Salad Bowls. Well, maybe that might be pushing it a little. Last week, I made Cucumbers, Sweet Peppers and Chicken Salad and this week I am back with this Chicken Sweet Potato Farro Salad. I am loving turning a rotisserie chicken into healthy, delicious salads! Even if you don't want to buy a rotisserie chicken, you can easily roast your own chicken, and shred the meat for using in a salad. But since my store has them on sale on the days I go grocery shopping it is just a no brainer for me.
The inspiration for this salad came from the Earth Fare ad. They had organic pears on sale. Pears sounded perfect for a rotisserie chicken salad bowl. I thought about what would pair with pears and add some color and settled on sweet potatoes. At first I was going to serve this over salad greens, which would have been fine. But it seemed like such an earthy salad with the sweet potatoes and pears, that instead I used one of my favorite grains - farro. You could easily substitute your grain of choice or even quinoa or couscous. A little extra crunch is provided by the toasted almonds and minced chives add a little bite and a little bit of color.
For the dressing, I wanted something with a little sweetness and a little bite. I remembered a dressing from Donna Hay from her Ginger Grilled Beef and Sweet Potato Salad (warning that post is from 2008, I'm sure at that time I thought that was an awesome photo. Sad. Very sad.) It was perfect. A little sweet with a little bit of heat. My favorite chili sauce to use is Mae Ploy Sweet Chili Sauce.
Queen of the Rotisserie Chicken Salad Bowls, I like the sound of that.
Chicken and Sweet Potato Farro Salad
Ingredients
- shredded chicken breast meat from a rotisserie chicken
- 1 large sweet potato , peeled and diced (½ inch dice)
- 1 pear , diced
- 3 cups cooked farro (or your grain of choice)
- 2 tablespoons sliced almonds , toasted
- 2 tablespoons diced chives
Sweet Chile Sauce Dressing
- ½ cup sweet chile sauce
- 2 teaspoons grated ginger
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375. Place the diced sweet potatoes on a baking sheet a drizzle with a little olive oil and sprinkle with salt and pepper. Toss to coat and roast for about 25-30 minutes.
- While potatoes are roasting, combine the ingredients for the dressing in a small jar with a lid.
- When potatoes are done, remove them from the oven.
- Divide the cooked grains evenly between the bowls. Divide the chicken, pears and sweet potatoes even between the bowls. Drizzle with the dressing (you'll have some left over). Sprinkle the almonds over the top and garnish with the chopped chives.
