This slow roasted chipotle salmon is sweet and spicy and so delicious.
Salmon is brushed with a sweet and spicy glaze, slow roasted until it's perfectly cooked and then topped with white wine, ginger and lime sauce.
We love salmon and I've tried it every which way from a Tray Baked Salmon with Green Beans to a Grilled Salmon with Tomato Caper Vinaigrette to Steamed Salmon with Lemongrass Pilaf.
Well, I am back today with a slow roasted salmon. When I tell you that this is restaurant quality - believe me! This tastes like a special occasion, but it's so easy and perfect for a weeknight dinner!

Ingredients for salmon glaze.
- Adobe sauce from a can of peppers. Then I like to individually freeze the peppers or lay them flat and freeze, so you can just break off one or two when you need them.
- Brown sugar.
- Kosher salt.
Ingredients for sauce.
- Dry white wine.
- Sugar.
- Fresh ginger - I keep mine in the freezer, it lasts forever and you can grate it straight from the freezer.
- Lime juice.
- Unsalted butter.
- Cornstarch - to thicken.
- Scallions - green parts only. Put the bottoms in a glass of water and regrow them.
Step by step instructions.
Preheat oven to 225°F. Line a baking sheet with aluminum foil and spray with a nonstick spray.
In a small bowl combine the sauce from the chipotle peppers, the brown sugar and the salt.
Place the salmon the baking sheet and brush half of the glaze over the salmon.
Roast for 30-45 minutes (you'll want to roast about 15-20 minutes for every inch of thickness.)
While the salmon is roasting, in a small saucepan combine the wine, sugar, ginger and lime juice. Boil until it is reduced to about ยพ cup, this should take about 7 minutes.
Combine the softened butter and cornstarch and whisk it into the sauce. Simmer for about a minute, until thickened. Stir in the scallions.
When the salmon is finished roasting, turn the oven to broil. Brush the remaining glaze on the salmon and broil about 3" from heat until just beginning to brown, about 3-5 minutes.
Serve the salmon with the sauce.

Ingredients
- 4 salmon fillets
Salmon Glaze
- 3 tablespoons Adobo Sauce from the canned chipotle peppers
- 3 tablespoons brown sugar
- 1 teaspoon kosher salt
Sauce
- 1 cup dry white wine
- 1 tablespoon sugar
- 1 tablespoon fresh ginger grated
- 1 tablespoon lime juice fresh squeezed
- 2 tablespoons unsalted butter softened
- 1 teaspoon cornstarch
- 1 tablespoon scallions thinly sliced, green parts only
Instructions
Salmon
- Preheat oven to 225°F.
- Line a baking sheet with aluminum foil and spray with cooking spray.
- Stir together the adobo sauce, brown sugar and salt. Place salmon on baking sheet and brush with ยฝ of the glaze. Roast for 30-45 minutes.
- When fish is done roasting, adjust oven to broil. Brush with the remaining glaze and broil 3" from the heat for 3-5 minutes.
Sauce
- Combine the wine, sugar, ginger and lime juice in a small saucepan. Bring to a boil over medium high heat and boil until until reduced to about ยพ cup.
- Blend the butter and the cornstarch together and whisk it into the sauce. Simmer about 1 minute until thickened. Stir in the scallions, saving some for sprinkling on top for serving.
