Mexican Side Dishes
Anyone else struggle with trying to find good Mexican Side Dishes. Oh, I know there is always rice and refried beans. But sometimes I want something a little different. Something that can go with tacos, or tostadas or [insert your favorite Mexican main dish here.]
Corn, Avocado and Black Bean Salad
The recipes that I am always the most pleased with are always the easiest, with the fewest ingredients. This is the kind of cooking that I want to do. The kind that almost doesn't need a recipe (but then what would I do!). Like the above salad. Oh, there is a recipe, it is Corn and Black Bean Salad from Martha Stewart, which I changed up a bit. But it really doesn't need one does it. I mean it's corn, black beans and avocado, tossed with a simple dressing of cilantro, lime juice and a chile pepper. But it's so good. It doesn't need any more than that. This is what I want to eat.

Corn, Avocado and Black Bean Salad
Ingredients
- 1 teaspoon vegetable oil
- 2 cups corn from about 3 ears of corn
- 15.5 ounce black beans canned, rinsed and drained
- 1 teaspoon minced seeded serrano chile
- 4 teaspoons chopped fresh cilantro
- 1 tablespoon fresh lime juice
- ½ avocado peeled, pitted and diced
- coarse salt and fresh ground black pepper
Instructions
- Heat oil in a skillet over medium high heat. Add corn and saute until just starting to brown, about 3 minutes. During the last minute, toss in the serrano chile.
- Transfer the corn mixture to a bowl and add the beans, cilantro, lime juice and avocado. Toss gently to combine. Season with salt and pepper.
