    Classic Cucumber Dill Salad

    This cucumber dill salad is the cucumber salad I grew up eating all summer long.  After making it, I can see why my grandma made it all the time.  It's so easy.

    Fresh cucumbers in a simple vinaigrette with fresh dill.  It's doesn't get much simpler than that. 

    This is the summer side dish that goes with everything and is ready in about 20 minutes!

    I've been getting a little nostalgic lately. Perhaps it's getting older, perhaps it's the crazy summer we've been having.

    Craving the foods I grew up eating. Simple, comforting foods.

    Like this dill cucumber salad. We had this all the time in the summer. Sometimes with onions, sometimes a creamy version (recipe coming soon.)

    Today's recipe is the salad in it's simplest form. It comes together in minutes and goes with everything.

    Vinegar, dill, sugar and cucumbers.

    Ingredients

    Vinegar - I used plain old white distilled vinegar like my grandmother did. It would also be good with white wine vinegar, apple cider vinegar or rice wine vinegar.

    Sugar - regular granulated sugar works fine.

    Dill - I can find organic dill in small packages at my grocery store. Every time I try to grow it, it bolts from our hot summers. Any growing tips would be appreciated!

    Cucumbers - these are from my CSA, hopefully you have some growing in your garden.

    Instructions

    In a bowl large enough to hold the cucumbers, mix the sugar and the vinegar. Whisk to dissolve the sugar.

    I prefer my cucumbers peeled and seeded. To do that, peel them and cut them half lengthwise. Using a regular spoon, a grapefruit spoon or a melon baller, scrape out the seeds. Then slice into small half moon shapes.

    Add the cucumbers to the bowl with the dressing. Mince the dill and add it to the bowl.

    Stir to coat the cucumbers, taste and add salt and pepper as desired.

    How easy was that?

    This simple salad proves that recipes don't need to be complicated to be good.

    Though you could change this up easily. You could add thinly sliced onions or red pepper flakes. Use cilantro instead of dill.

    Cucumber Dill Salad

    Ingredients

    • 4 cups cucumbers peeled, seeded and thinly sliced
    • 1 tbsp sugar
    • ¼ cup white vinegar
    • 2 tbsp fresh dill chopped
    • salt and pepper to taste

    Instructions

    • In a bowl, whisk together the sugar and the vinegar, until the sugar dissolves.
    • Add cucumbers and dill to the bowl and toss to combine.
    • Taste and add salt and pepper as desired.

    Notes

    This is the basic recipe.  You can add sliced onions or red pepper flakes.  You can substitute your favorite herb for the dill.  I like to use cilantro sometimes.
