Healthy Grilled Chicken
Grilled chicken breasts are perfect for healthy grilled chicken recipes, but you need to kick them up a notch. This recipe, my friends, kicks them up several notches.
There are not going to be enough adjectives for me to use to describe how good this was. How much we loved it. We stopped several times while eating it with murmurs of, "This is so good!" or "We need to make this again!"
This was such a simple dinner, where the sum is so much greater than the parts. Chicken breasts are tossed in smokey paprika spice mixture. They are quickly grilled, along with a some corn on the cob and even the romaine lettuce is grilled. The corn is sliced off the cob and mixed with onions, black beans and tomatoes. A quick dressing, one that I am going to put on every single thing I make, is just a simple mixture of yogurt, lime juice and cilantro.

It is so good. It tastes similar to a favorite salad of mine from a chain restaurant, but with probably half the calories! One little change that I made was that I used pickled red onions. I don't like raw onions, so I keep a jar of quick pickled onions (usually minus the cloves and bay leaf) in the fridge at all times to use in any recipe that calls for raw onions.
I found this recipe in Donna Hay's Fresh & Light Magazine, which they are sadly not going to produce any more. If you're looking for more Donna Hay recipes, here are a few of my favorite cookbooks: Donna Hay The New Easy, Fresh and Light: Donna Hay, and Fast, Fresh, Simple.

This looks delicious! I canโt seem to find the amount of corn to use. Probably just overlooking it but would appreciate the help. Thank you!
Pam Greer says
Oh gosh, I completely left it off! So sorry! It calls for 3 corncobs.

Making this tonight. Did I miss where the garlic goes? In the marinade or dressing. Iโm doing a little in both! Can never have too much garlic!
Thanks!
Pam Greer says
Oops! It goes in the marinade!

Looks like a great variation on the standard grilled chicken. I never thought of grilling lettuce, though, but I've seen corn on the cob grilled, often right in the husk. This sounds like a fine summertime dinner.

I just printed the recipe. It does look delicious and easy enough for me to do on a weeknight. I hope that salsa goes well with fish, that's what i am going to try.
