This Honey Simple Syrup is an easy way to up your cocktail game.  It adds such a richness of flavor to cocktails.  It's also great in tea and other non alcohol drinks!

    Fall and Winter Cocktails

I know it's not even September and I am already dreaming of and drinking some fall and winter cocktails!  Just last week, I made The Hanky Panky Cocktail and The Last Word Cocktail.  While there is nothing decidedly fall or winter about them, they don't have all the fruit, ice and bubbles that I associate with summer cocktails.

I do have plans for some fall cocktails featuring apples and maple - which scream fall to me.  While you wait for them, you could try this Apple Rosemary Cocktail or this Maple Manhattan.  Both delicious fall cocktails!

Another very easy way to give a cocktail a more fall or winter feel is with Honey Simple Syrup.  It is so simple, but it really does add a certain lushness and richness to the cocktails that a regular simple syrup doesn't.   The best part is that it's crazy easy!

Ingredients to make honey simple syrup - water, honey, pot, and bottle.

How To Make Honey Simple Syrup:

It's so easy to make this simple syrup that I actually included the pot and the bottle in the photo!  It looked a little empty with just water and honey, which is all you need!

Honey - I use local honey.

    Water - filtered if possible.

    Small Pot.

Bottle - someone asked me where I get my brown bottles that I store my simple syrup in.  It comes from my love of gin and tonics.  Instead of buying tonic water, I use my soda stream to fizz up some water and then I use Jack Ruby Tonic Syrup.  Afterwards I save the brown bottles.  I found that I was wasting a lot of tonic water with it going flat.  This way, I mix up enough tonic just for one drink.  No waste!

To make the honey simple syrup, you just combine equal parts water and honey in a pot.  Heat over low heat, stirring until the honey dissolves in the water.  Remove from the heat, cool to room temperature and store in the fridge.  It should keep for two to four weeks.  It's so easy to make though, that I usually just make a small batch, usually ½ cup of water and honey.

Later in the week, I'll be posting a Bees Knees cocktail, which calls for Honey Simple Syrup.  However, you can use this honey simple syrup in any recipe that calls for a simple syrup.  Try it!  I think you'll be surprised how much it brings to the cocktail!

Simple syrups are one of my favorite ways to change up cocktails, here are a few of my favorites:

Jalapeño Simple Syrup - easily add a spicy kick to cocktails.

Lavender Simple Syrup - adds a lovely delicate floral note to cocktails.

Hibiscus Simple Syrup - fruity and tart and makes the most gorgeous colored cocktails.

Ginger Simple Syrup - another favorite for fall and winter.  Love the spiciness of the ginger.

Rosemary Simple Syrup - makes all cocktails feel like Christmas with it's subtle pine-like flavor.

Thyme Simple Syrup - elevates cocktails with a subtle herby note.

I am addicted to this stuff. I make it constantly, and have shared it with my sister. My new favorite drink that I just cannot get away from is your Bees Knees. SOOOO delish, refreshing, simple and flavorful!
