Instant Pot Steel Cut Oats with Maple Syrup
Brrr...baby it's cold outside! Are you managing to stay warm with this crazy weather?! The cats and I are suffering from cabin fever. We venture out for teeny tiny does of the cold weather and then head right back inside. One of my resolutions was to try and go for a walk everyday. Yeah, so that's not going to happen, check back with me in March, maybe. One thing good to come of out of this cold weather? This amazingly delicious and good for you Instant Pot Steel Cut Oats with Maple Syrup, that's what! It was too cold for our usual granola and milk, and this was perfect!
I've professed nothing but love for my Instant Pot - Instant Pot Ground Pork and Pasta and Instant Pot Red Wine Beef Stew - to just name two ways! There are weeks when I literally used it for every single dinner. So, I am constantly looking for new ideas, new ways to use it, so when I saw Dinner in an Instant by Melissa Clark, it sounded like a great choice.
Oh my, I've marked so many things to try. The first was this Instant Pot Steel Cut Oats with Maple Syrup. It was a definite winner and will go into heavy winter breakfast rotation around here. If you don't have an Instant Pot, you need one! It is seriously a game changer.
Instant Pot Steel Cut Oats with Maple Syrup
Ingredients
- 1 tablespoon unsalted butter
- 1 cup steel-cut oats
- 1/4 cup dried currants or raisins
- 1 tablespoon maple syrup
- 1/4 teaspoon salt
Instructions
- Turn the Instant Pot to the Saute function. Add the butter. When it's melted, stir in the oats, currants, syrup and salt. Stir until the oats are toasted about 3 minutes.
- Stir in 3 1/4 cups water. Lock on the lid and set the valve to sealing. Set to high pressure for 10 minutes. When finished, allow the pressure to release naturally for 10 minutes, then do a pressure release.
- Stir and then serve with additional butter or maple syrup if you wish.

Country Cook Weekend Potluck
Technique question: What is the easiest way to pour out the contents of the hot liner pot? I have a pair of silicone mitts. They do a fair job of helping to remove the liner pot from the cooker. (Although, I am expecting to drop the liner at some point. They are not very secure.) Once the liner is on the counter, how do you lift it to pour the oatmeal into another container?
I just use thinner style oven mitts. They are small enough to get under the lip of the pot and I can lift it up easily. I serve the steel cut oats right from the pot.
