Mediterranean Couscous
Have you tried Israeli couscous? It's just like regular couscous, but it's bigger. It's also called pearl couscous. I love it. While it takes slightly longer to cook than regular couscous, it is ready in under 10 minutes! Putting this recipe in the 30 minute dinner category for sure!
I love that it pairs with so many things. In this recipe the couscous takes on a mediterranean flare with kalamata olives and bell pepper.Making for a colorful and delicious side dish!
Mahi Mahi with Olive and Bell Pepper Couscous
I originally found this recipe at Cooking Light. It sounded perfect. Anything that calls for kalamata olives is a winner in my book. It also called for halibut which I didn't have, but I did have some mahi mahi.
I was going to google and see if that was an adequate substitute, but why bother. I substitute fish willy nilly not paying any attention to whether it's a close substitute and it's worked so far. Oh I know if I was grilling salmon kebabs or something I would need another firm fish, but for this recipe, I think you can substitute to your heart's content.
Using Fresh Oregano
Oh, I forgot to address point number two - it called for fresh oregano. Do you grow oregano? I'm not sure, but I think it's in the mint family, because that would be the only explanation for how crazy this stuff grows. If you let it, it will take over your entire bed, yard, and then move on to conquer the neighborhood. So, if I find a recipe that gives me a reason to go out and cut a few snips off the beast, I am all for it.
This recipe was perfect for a quick weeknight dinner. Easy peasy, flavorful, and light. Also, one note. Cooking light says this serves 4. That is with a ½ cup of this couscous. Since I wasn't serving another side dish with this, we used all of the couscous on two servings.

Mahi Mahi with Olive and Bell Pepper Couscous
Ingredients
- 2 teaspoons olive oil divided
- ½ cup diced red bell pepper
- 2 garlic cloves minced
- ½ cup uncooked Israeli couscous
- ¾ cup low sodium chicken broth
- 2 tablespoons kalamata olives pitted and quartered
- ½ teaspoon kosher salt divided
- ½ teaspoon freshly ground black pepper divided
- 4 (6-ounce) skinless halibut fillets (I used mahi mahi)
- 4 teaspoons torn fresh oregano
- 2 lemons cut into ½ inch slices
Instructions
- Preheat the broiler to high.
- In a medium saucepan over medium high heat, add 1 teaspoon of oil. Add the bell pepper and garlic, and cook for 1 minute, stirring occasionally. Add the couscous and let it toast for about a minute. Add the broth and bring to a boil. Cover, reduce the heat, and let it simmer for about 7 minutes. Stir in the olives and season with salt and fresh ground black pepper.
- Sprinkle your fish with salt and pepper. Heat a large oven proof skillet over medium-high heat. Add a teaspoon of oil to the pan and swirl to coat. Add fish to the pan and cook for about 3 minutes. Turn fish over and arrange the oregano leaves and lemon slices over the fish. Broil for about 5 minutes or until fish is cooked through.

I have the same problem with having too much clutter and an overflowing pantry, so I feel you. "Organize pantry" has been on my list for like 6 months. Love that you were able to pull together such a fab dinner based on what you had on hand, and this looks so healthy too!

That's a shame about the rice. We struggle to access good fresh fish where I live and I won't buy fillets unless I buy a whole fish and get the fishmonger to do it. I found a giant packet of burghul in my pantry - haven't the foggiest idea what I bought it for.
