    Slow Cooker Marmalade Glazed Carrots

    Use your slow cooker to make these easy and delicious Marmalade Glazed Carrots.

    Put you carrots, marmalade, brown sugar, butter, cinnamon and nutmeg in the crockpot and let it work it's magic!

    Great for holiday dinners when your stove and oven are already busy!

    Last week, I discovered that I love using my Instant Pot to make side dishes - like the Instant Pot Green Beans with Bacon and Mushrooms.

    It got me thinking about my other favorite small appliance - my slow cooker! I use it for soups and stews and everything else, why not side dishes?!

    You all are probably shaking your head, already knowing what I just figured out - the crockpot makes amazing side dishes!

    I started with the super easy Marmalade Glazed Carrots and now I'm hooked! They were so easy and so good, they would be perfect for any holiday dinner - like Thanksgiving, Christmas or Easter, but they are so easy, you can have them any time you want!

    Brown sugar, cinnamon, nutmeg, butter, marmalade and carrots.

    Ingredients:

    Butter - I use unsalted in all my cooking and baking - I prefer to control the amount of salt I add.

    Brown sugar, cinnamon and nutmeg.

    Marmalade - I used a seville orange marmalade, use your favorite.

    Salt, pepper, cornstarch and water.

    Slow cooker insert filled with carrots, spices and butter cut into small pieces.

    Instructions:

    Cut the carrots into 1 inch chunks or thinner slices and add them to the slow cooker.

    Add the marmalade and a tablespoon of water.

    Add the brown sugar, cinnamon and nutmeg.

    Cut the butter into small cubes and add it.

    Season with salt and pepper.

    Carrots in a slow cooker tossed with spices and butter.

    Stir to coat the carrots with the marmalade and the spices.

    Place in the slow cooker and cook on low for 7 to 9 hours.

    About 15 minutes before you are ready to serve, mix two tablespoons of water with 1 tablespoon of cornstarch and stir it into the carrots.

    When ready to serve taste and adjust the seasonings.

    Sorry I didn't get a photo of the carrots after they cooked in the crockpot, they smelled so good, I served them right up - forgetting to take a photo!

    These easy glazed carrots were so good. We had them with Grilled Spatchcocked Chicken, but they would be amazing with just about anything!

    I will definitely be using my slow cooker for more side dishes from now on! Check back to see what else I try!

    Marmalade Glazed Carrots

    Use your slow cooker to make these easy sweet glazed carrots! The perfect holiday side dish, but so easy you'll make them all the time.

    Ingredients

    • 2 lbs carrots peeled and cut into 1 inch chunks
    • ½ cup orange marmalade
    • 1 tbsp water
    • 2 tbsp brown sugar
    • 1 tbsp butter cut into small cubes
    • ½ teaspoon cinnamon
    • ¼ teaspoon ground nutmeg
    • 1 tbsp cornstarch
    • 2 tbsp water
    • salt and pepper to taste

    Instructions

    • Place all the ingredients in the slow cooker except for the 1 tablespoon of cornstarch and the 2 tablespoons of water.
    • Cook on low for 7-9 hours.
    • About 15 minutes before serving, stir the cornstarch with the 2 tablespoon of water to form a paste. Stir it into the carrots to thicken.

    Notes

    You can cut the carrots into chunks or slices.

      Totally delish! You're so right....easy enough for everyday but special too and worthy of a holiday side dish. A great way to get kids to eat their veggies too.
