    One Part Plant

    The premise behind One Part Plant is simple, eat one meal a day that is all plant based.  What a great idea.  Such an easy way to start eating in more healthy manner.

    The  book opens with a personal introduction from the author about her endometriosis and how a plant based diet has helped her.  She then moves on to pantry essentials and a FAQ session.  Next comes the recipes.

    Since the book is based on the idea of making one meal a day plant based, that is basically how the recipes are organized.  In addition to morning, mains and desserts, there are sections for dips, sides, and spreads and soups and salads.  There are so many that I want to try, but I am only going to share 3 from each session, otherwise this would go on and on!

    Morning - The morning section ranges from smoothies, to overnight oats, to granola. A little something for everyone.  I have marked to try:  Orange Basil Shot, Creamy Peach Porridge, and Chilaquiles with Cilantro Cream.

    Dips, Sides and Spreads - So many choices!!  I’ve marked to try:  Tahini Honey Spread, White Bean Buffalo Hummus, and Fennel and Cabbage Slaw.

    Soups and Salads - I think this might be my favorite chapter!  I marked to try:  Carrot and Pistachio Salad, Quinoa Taco Salad, and Ruth Reichl’s Butternut Squash Soup.

    Mains - Everything sounds so good!  I’ve marked to try - Rosted Asparagus and Tomato Pasta, Coconut Quinoa and Beans, Mashed Potato and Gravy Bowl.

    Desserts - I was thrilled to see a dessert section!  I’ve marked to try:  Almond Butter and Blueberry Cookies, Chocolate Hazelnut Crisps, Triple Berry Skillet Cobbler.

    I have joined a year long CSA this year and have been making an effort to eat lots more fruit, veggies, beans and legumes.  This book will definitely make that so much easier and so delicious!!
