Take a classic gimlet to a whole new level with this Pansy Gimlet! Sweet and floral with a bit of tang from the lemon juice!
With only 3 ingredients and served straight up in a coupe glass the gimlet is an easy cocktail to master and it's just as easy to drink!
From the first sip to the last, you're going to love this edible flower cocktail! Plus the bright cheerful yellow color is amazing!

My new favorite cocktail is definitely a gimlet. It's basically a gin sour, shaken and served in a coupe glass.
What's a sour? A sour is a cocktail made with a liquor, a sweetener and a citrus.
A gimlet is typically made with either vodka or gin, lime juice and simple syrup.
With only 3 ingredients, it's really easy to change up one of them and totally change the cocktail. Like this pansy gimlet. I used pansy simple syrup to create this cheerful bright yellow cocktail!
Ingredients:
Gin - I used Beefeater because I thought it's juniper and citrus flavors would pair nicely with the floral syrup. Use your favorite gin.
Pansy simple syrup - you can use any flower simple syrup.
Lemon juice - I was afraid that lime juice might overpower the soft floral flavor, but feel free to try it!
Making cocktails is all about experimenting!
Instructions:
Fill a coupe glass with ice to chill it. Alternatively you can put it in the freezer, but there is always the risk of breaking the glass!
Add 1 ½ ounces of gin to a cocktail shaker and then add 1 tablespoon of pansy simple syrup.
Pour in ¾ ounce of lemon juice.
Fill the shaker about three quarters full of ice and add the lid.
Shake vigorously for 10-15 seconds. You are shaking to properly chill and dilute the drink.
Dump the ice out of your chilled glass and strain the cocktail into it.
Garnish with a pansy flower.
This pansy gimlet was so good! Just look at that bright cheerful color!
You can see that I made it the same night I made the Hibiscus Martini using the Hibiscus Vodka that I made from the edible flowers from Gourmet Sweet Botanicals.
If you missed my original post, I won some edible flowers and then set out to make simple syrups, infusions and cocktails! They are such a fun way to make delicious and gorgeous cocktails!

I was a bit unsure, since I've never used flowers in my cooking before, but this was great! Such a great way to add flavor to the drink.
