    Parmesan Roasted Asparagus

    This Herb and Parmesan Roasted Asparagus is the perfect asparagus recipe!  The asparagus is crisp tender and coated with a crispy herbed bread crumb and parmesan topping!  Take simple roasted asparagus to a whole new level!

    The best roasted asparagus!

    Growing up the only asparagus we had was from a can. It wasn't until I was at someone's wedding and they had tender fresh asparagus and people where talking about how amazing it was.

    Asparagus? Amazing? I had my doubts, but I gave it a try and have never looked back.

    Asparagus cooked correctly is so good, asparagus roasted is even better.

    After making herbed bread crumbs last week and using them on practically everything, I decided to make an Herb and Parmesan Roasted Asparagus.

    Parmesan cheese, butter, olive oil, herbed bread crumbs and asparagus.

    Ingredients

    Parmesan Cheese - buy the wedges and grate it yourself. So much better!

    Butter - just a little adds plenty of richness or you could use all olive oil.

    Olive oil - I like to use a blend of olive oil and butter with asparagus.

    Asparagus - try to find thin if you can.

    Herbed bread crumbs - recipe linked below in directions. Can also use plain bread crumbs.

    Directions

    Preheat oven to 425.

    Wash asparagus and trim off the tough ends.

    Tip - if you grasp the asparagus with one hand in the middle and one hand at the stem end and bend it until it breaks, it will snap off at the perfect point for trimming!

    Place the asparagus on a baking sheet.

    Grate parmesan cheese.

    Prepare herbed bread crumbs if you haven't already or use plain.

    Melt the butter (I use a microwave for about 10 seconds.)

    Drizzle the asparagus with the olive oil and the melted butter.

    Spread the asparagus out and sprinkle with the bread crumbs and the parmesan cheese. Turn to coat.

    Roast for 7-11 minutes - depending on how thick your asparagus is.

    Just look at the photo! I'm sure I don't have to tell you how amazing this asparagus was!! Tender on the inside, crisp and cheesy on the outside!

    Herb and Parmesan Roasted Asparagus

    Ingredients

    • 1 lb asparagus
    • 2 tbsp extra virgin olive oil
    • 1 tbsp butter melted
    • ⅓ cup Herbed Bread Crumbs
    • ⅓ cup Parmesan cheese

    Instructions

    • Preheat oven to 425.
    • Wash asparagus and trim off tough ends.
    • Place asparagus on baking sheet and toss with melted butter and olive oil.
    • Sprinkle with bread crumbs and parmesan cheese, toss to coat.
    • Roast for 7-11 minutes depending on how thick your asparagus is.

    Notes

    If you don't have herbed bread crumbs you can substitute plain.
