The other day, I realized it had been ages since I had this delicious rum cocktail, well since last summer, which definitely feels like ages. We had some coconut milk from another recipe and I had frozen pineapple, so we were good to go!
One sip and we vowed to always have the ingredients to make this any time we want. It's so good.

Ingredients
Rum - you can make this with only white rum, but we really like the complexity that using dark and light rum give this drink. The dark rum brings vanilla, spice and caramel. The white rum brings a crisper cleaner tropical fruit flavor. Read this Rum Guide to help you make your rum selections.
Coconut Milk - coconut milk, not coconut cream.
Pineapple - we buy whole pineapples whenever they are on sale and cut them into small wedges and freeze them in a ziploc or vacuum sealed bag. They are great for smoothies or frozen cocktails. Save some to make Pineapple Jalapeño Infused Tequila.
Step by Step Directions
Measure 2 ounces of coconut milk and get 1 cup of frozen pineapple wedges from the freezer.
Measure out 1 ½ ounces of light rum and and 1 ounce of dark rum.
Place the coconut milk, rum, pineapple and ice cubes in a blender.
Blend until smooth and then pour into a chilled hurricane glass.
Cocktail umbrella optional, but recommended 🙂

Really, go buy some pineapple, cut it into wedges and store a bag full in the freezer. That way you are always just minutes away from the tasty fruity cocktail!
