    Piña Colada Cocktail

    If you're looking for a fruity, refreshing cocktail look no further than the classic Piña Colada!  This recipe has the perfect blend of rum, pineapple and coconut milk, one sip and you are transported to a tropical island.

    Raise your hand if every time you hear the words Piña Colada, you have to sing the Piña Colada Song. 

    Same here.

    Or if you are more like me, you actually only know the first sentence of the song. 

    The other day, I realized it had been ages since I had this delicious rum cocktail, well since last summer, which definitely feels like ages.  We had some coconut milk from another recipe and I had frozen pineapple, so we were good to go! 

    One sip and we vowed to always have the ingredients to make this any time we want.  It's so good.

    Dark rum, light rum, coconut milk, frozen pineapple.

    Ingredients

    Rum - you can make this with only white rum, but we really like the complexity that using dark and light rum give this drink.  The dark rum brings vanilla, spice and caramel.  The white rum brings a crisper cleaner tropical fruit flavor.   Read this Rum Guide to help you make your rum selections. 

    Coconut Milk -  coconut milk, not coconut cream.  

    Pineapple - we buy whole pineapples whenever they are on sale and cut them into small wedges and freeze them in a ziploc or vacuum sealed bag.  They are great for smoothies or frozen cocktails.   Save some to make Pineapple Jalapeño Infused Tequila.

    Step by Step Directions

    Measure 2 ounces of coconut milk and get 1 cup of frozen pineapple wedges from the freezer.

    Measure out 1 ½ ounces of light rum and and 1 ounce of dark rum.

    Place the coconut milk, rum, pineapple and ice cubes in a blender.  

    Blend until smooth and then pour into a chilled hurricane glass.  

    Cocktail umbrella optional, but recommended 🙂

    How easy was that?!  

    Really, go buy some pineapple, cut it into wedges and store a bag full in the freezer.  That way you are always just minutes away from the tasty fruity cocktail!

    Piña Colada

    This Pina Colada recipe is easy and delicious! So fruity and refreshing!

    Ingredients

    • 1 ½ ounces rum light
    • 1 ounce rum dark
    • 2 ounces coconut milk
    • 1 cup pineapple frozen, wedges
    • 4 ice cubes

    Instructions

    • Add rum, coconut milk, pineapple and ice cubes to a blender.
    • Blend until smooth and frosty.
    • Garnish with a pineapple wedge (if desired.)

    Notes

    If you don't have frozen pineapple, add a cube or two more of ice.

      Pina Coladas inspire such nostalgia for me. When I was a child and would go out to dinner with my parents, I would always order virgin pina coladas then when I got older this became one of my faves. However, it has been several years since I had one and now you are having me crave one right now!

      As soon as it really warms up I’m making these! They really are fabulous, and at least don’t cost $16. Like they do in Hawaii! Love that you freeze the pineapple.
