I am a huge fan of infusions. A little bit of prep work chopping and then time does all the work for you! I’m all for things that are busy working, while I am going about my business.

Infusing Tequila
I started thinking about making a Pineapple Jalapeño Infused Tequila after I had an incredible Pineapple Jalapeño Margarita at a local restaurant. I immediately envisioned some infused tequila in my future.
This isn’t my first time infusing tequila, I’ve also made a Watermelon Infused Tequila – which I highly recommend! Turns every margarita into a little bit of summer.
Pineapple Jalapeño Infused Tequila
The secret to this Pineapple Jalapeño Infused Tequila is tasting it along the way. Jalapeños infuse faster than pineapple, or rather, I get the amount of heat I need faster than I get the pineapple flavor that I want. To infuse with jalapeño, I just took a whole pepper and cut it through lengthwise, but leaving it attached at the top.
I diced about a cup of pineapple and added it along with the jalapeño to one and one half cups of tequila. I placed it in a mason jar and set it on the counter.
After just one day, the jalapeño had added the perfect heat level for me. I don’t like it too hot, just a hint of heat at the back of your throat. Testing it each day, I had the pineapple level I liked at about day 3.
A little tip for what to do with that tequila soaked pineapple – I scooped it out of the jar and did a quick puree with a blender and stored it in a jar in the freezer. I plan on adding some of it to the pineapple jalapeño margaritas that are sure to be in my immediate future!

Pineapple Jalapeño Infused Tequila
Ingredients
- 12 ounces tequila
- 1 cup pineapple diced
- 1 jalapeño pepper sliced open
Instructions
- Place all ingredients in a jar and seal.
- Begin tasting after one day. As soon as it is hot enough for you, remove the pepper.
- When you have enough pineapple flavor, remove the pineapple. I steeped mine for 3 days.
- Store in pantry, fridge or freezer.

It depends on how hot you want it. The seeds will make it hotter.

I don't think so, I usually use white.

Hi. Just wondering. Can i infuse the tequila for 2 weeks or more, will the tequila go bad?
Also, after removing the pineapple, how long can we stored the infused tequila. Thank you very much for ur information.

No, it won't go bad, would just make the infusion have a stronger flavor. I wouldn't do the jalapeño for that long though, it would probably be too hot! I usually try to use my infused liquors up in 6 months to a year.

I usually try to buy a middle priced tequila. You don't want to go too cheap and there is no need to go super expensive.

Just make sure the tequila is 100% pure agave or else you’re getting a “mixto” which is more like half tequila half muster sugar-distilled liquor Casamigos or Espolon are great 100% pure options 🙂

Can you add the jalapenos towards the end instead of putting it all in at the begging and removing them prior to the pineapple?

Yes you could. The only thing is you might want it hotter than I did. So if you add it at the beginning, you have the option of leaving it in all 3 days, tasting it along the way.

Do you know if the liquid becomes less alcohol as the pineapple takes on the tequila ?

I'm not sure, but I wouldn't think it would decrease in alcohol very much.

You can let it steep longer, but it will get hotter, so you'll need to taste test along the way.
