This light and healthy Asian Pork Noodle Soup is so easy to make in the Instant Pot!
Simple and delicious with pork, kale, mushrooms and lots of ginger, this is the perfect light comfort food!
I'm not sure when you are reading this, but right now we are coming off of heavy holiday eating.
This soup is the answer to all that eating. It is simple, fresh, light and healthy. I found it in an American Heart Association Instant Pot Cookbook.
It's very basic, but you could easily jazz it up with your favorite Asian flavors and seasonings - like fish sauce, chili paste or whatever you like!
Ingredients.
Chicken broth - store bought or Homemade Chicken Stock.
Ginger, onions and garlic (garlic not pictured.)
Mushrooms - simple white button will work, or you could use cremini or your favorite wild mushrooms.
Kale - for this version I used Lacinato Kale, you can use whatever kale you have. Swiss chard would also work.
Not pictured: Pork tenderloin, crushed red pepper flakes, udon noodles, radishes and green onions.
Step by step instructions.
Prep the meat and the veggies: cut the pork into bite sized pieces, chop the onion, slice the mushrooms, stem and coarsely chop the kale, peel and mince the ginger and mince the garlic.
Heat the oil in the Instant Pot on the Sauté function. When it's hot, add the pork and cook until browned, about 4-6 minutes.
Add the onion and cook until softened, about 3 minutes.
Add the mushrooms and cook until starting to brown, about 3 minutes.
Sprinkle with a little salt and pepper and stir.
Stir in the broth, kale, ginger, garlic and pepper flakes.
Cook on high pressure for 10 minutes.
When the time is up, let the pressure release naturally for 10 minutes and then turn the venting knob to let the pressure release quickly.
Taste and
While the soup is cooking, prepare the noodles according to the package directions and slice the radishes and the green onions.
Divide the noodles between the bowls, ladle on the soup and top with the radishes and green onions.
This is pure comfort food and perfect way to refresh after any heavy eating!
It is super simple and so easy to change it up a bit. We like to stir in a little Sriracha sauce or Gochujang.
You can also vary the toppings - using sprouts, cilantro, pickled ginger.

Instant Pot Asian Pork Noodle Soup
Ingredients
- 2 teaspoons canola oil
- 1 lb pork tenderloin cut into bite sized pieces
- 1 onion chopped
- 8 ounces mushrooms button, sliced
- 4 cups chicken stock
- 2 cups kale stems removed, coarsely chopped
- 1 cup water
- 2 tablespoons ginger peeled and minced
- 3 cloves garlic minced
- ยผ teaspoon crushed red pepper flakes
- ยฝ teaspoon black pepper
- 6 ounces udon noodles or whole wheat fettuccini or spaghetti
- radishes for garnish, optional
- green onions for garnish, optional
Instructions
- Set the pressure cooker to sauté and add the oil. When the oil is hot and just barely smoking, add the pork. Cook, stirring frequently, until the pork is browned - about 4-6 minutes.
- Add the onion and cook for about 3 minutes or until the onion is softened. Add the mushrooms and cook for about 3 more minutes.
- Add the chicken stock, kale, water, ginger, garlic, red pepper flakes and black pepper.
- Cancel the sauté feature and lock the lid in place. Be sure the vent is set to sealing. Set the pressure to high and the time for 10 minutes.
- While the soup is cooking, cook the noodles according to package directions.
- When the time is up, let the pressure release naturally for 10 minutes then do a quick pressure release by turning the knob to venting. When the pressure valve drops, remove the lid, stir and taste to adjust seasonings.
- Divide the noodles between the bowls and ladle the soup on top. Serve with radishes and green onions if desired.
