    9 Quick and Easy Refrigerator Pickles

    Enjoy this collection of 9 easy and delicious quick refrigerator pickles!  No canning required, ready in as little as 24 hours! 

    Everything from classic cucumber pickles, to radish pickles, even pickled asparagus!  Perfect for snacking, picnics and appetizer or charcuterie boards.

    I have nothing against canning, it is a great way to enjoy summer's bounty all year round.

    But sometimes, you don't want the production that canning can sometimes feel like.

    Luckily you don't have to. Quick refrigerator pickles are my most favorite thing in the world. Whenever I have a bounty of veggies, I make a quick jar of refrigerator pickles and most of them are ready to eat the next day (though they get even better if left for a couple of days.)

    Quick pickles allow you extend the life of your veggies to about 3-4 months. Not as long as canning, but so easy and so enjoyable!

    Always in my fridge refrigerator pickles.

    I'm starting with the pickles that I keep in my fridge year round. As soon as the jar is empty I make another batch. I usually reuse the pickling liquid 2 or 3 times and then start a new batch.

    Expert tip: don't throw away the pickling liquid! It is great for sauces and vinaigrettes!

    Quick pickled onions are my number one quick pickle. I use these in everything. Any time a recipe calls for raw onions (which I am not a fan of) I substitute these pickled onions.

    You can pickled white onions, but I love the sweetness and the color of the red onions.

    Pickled peppers - I use these on everything too! They are great on salads and sandwiches.

    Quick Pickled Radishes - I have to warn you, these are quite "fragrant" when you open the jar. Don't let that strong aroma deter you though, they are like candy!

    I find myself standing at the fridge, just eating them out of the jar! Great in salads, sandwiches, and snacking!

    Spring pickles.

    Every spring, I make a jar of these refrigerator asparagus pickles. Yes, I know you can get asparagus year round now, but there is something extra special about that first asparagus of spring.

    These are great for snacking, picnics, and amazing on a charcuterie board.

    Thai Pickled Cabbage is an unusual pickle, but one that you should have in your collection. This is adds a tart crunch to any Southeast Asian dish. We love it with fried rice, and any sticky sweet dishes.

    Cucumber and zucchini pickles.

    This is where quick pickles really shine. They are the perfect way to use up a bounty of cucumbers, zucchini or yellow squash.

    Bread and butter pickles are some of my favorite pickles. I love that sweet tart combination. Luckily this refrigerator version is every bit as delicious as canned!
