This Raspberry Gimlet is a gorgeous 3 ingredient gin cocktail that everyone loves! Fruity and refreshing and so easy to make!
I can't believe I have never made a fruity gimlet before!! Truly one of the easiest cocktails to make!
A gimlet is simply two parts gin to one part lime juice. Some recipes call for fresh lime juice and some call for Rose's Sweetened Lime Juice.
Instead of using sweetened lime juice, I used half lime juice and half raspberry syrup.
Just look at that gorgeous color and believe me, it tasted as good as it looks!
Ingredients
Gin - I used a favorite London Dry Gin - Beefeater.
Raspberry Syrup - This raspberry syrup is really one of my favorite things I've made lately. I used it on some store bought cheesecake and then make a Frozen Raspberry Daiquiri last week!
Lime Juice - fresh squeezed please!
Raspberries - extra raspberries for garnish (optional.)
Instructions
Chill the coupe glasses either by placing them in the freezer (I don't do it this way anymore after breaking a glass) or by filling the glass with ice cubes.
Fill a cocktail shaker with ice.
Add 2 ounces of gin.
Pour in ¾ ounce of raspberry syrup.
Pour in ¾ ounce of lime juice into the cocktail shaker.
Place a lid on the shaker and shake for until shaker is frosty - about 15 to 30 seconds.
Dump out ice from the now chilled coupe glass.
Strain cocktail into glass.
Optionally garnish with extra raspberries.
People. This was so good.
It was sweet and tart and everything I want in a cocktail. It's also gorgeous!
That color makes it perfect for Valentine's Day or Mother's Day or any day you need a pretty bright red cocktail - which for me is any day of the week!
So easy to make and so easy to sip.

Raspberry Gimlet

- raspberries optional, for garnish
Instructions
- Place ice in coupe glasses to chill.
- Fill a cocktail shaker with ice.
- Pour in gin, lime juice and raspberry syrup.
- Shake for 15-30 seconds to chill and dilute.
- Strain into glass and garnish with extra raspberries if desired.
