Roasted Chicken with Tangerines and Olives
You know what I don't understand? How does my house get so messy? There are only two of us. The children are grown-up and moved out, so I can't blame them. Mr. Sidewalk Shoes is at work most of the day. We do have two cats. That must be it. Those darn cats. Because it's certainly not me. I'm not messy. Though as I turn my head slowly, looking at my desk from right to left and back again, I have a sinking feeling.
On my desk right now (and this is just one half): a bottle of spray cleaner (ha!), hand lotion, paid bills, a "keep calm and eat cupcakes" sign, two dead batteries, a cup filled with pens, a container of paper clips, a wade of fringe from when you tear a piece of paper out of a spiral notebook, a piece of blue yarn, a J. Jill credit card, a moleskin notebook and pen, 5 sticky notes with various reminders, 3 thumbnail flash drives, two highlighters, 4 pencils, two pens, 3 external hard drives, a glass of water, two spiral notebooks, a large eraser, a stapled together list of photos that Flickr is interested in, a stack of client workflow sheets, a hair clip, mouse and mousepad. Whew. And that is just the right side of my desk.
Well, I think we figured out why my house is messy.
Let's move on to nicer topics like today's roasted chicken recipe. Roasted Chicken with Tangerines and Olives. This is why I love roasting. It's so easy and simple and produces such gorgeous looking and great tasting dinners. Just look at how pretty it is. I love food that looks rustic, with all those yummy browned bits (thank goodness Mr. Sidewalk Shoes does the dishes). If you look closely you might notice that these are actually oranges and not tangerines, close enough in my book. The recipe calls for a whole cut up chicken, I just used my favorite whole legs. Scoop this up and serve it with some rice or pasta, totally delicious!
Roasted Chicken with Tangerines and Olives
Ingredients
- 4 whole chicken legs
- 3 oranges unpeeled and quartered (or tangerines)
- 3 tablespoons orange juice or tangerine juice
- ⅔ cup pitted green olives
- 2 tablespoons honey
Instructions
- Preheat oven to 400. Place chicken skin side up on roasting pan, sprinkle with salt and pepper. Toss olives and oranges around the chicken, you can tuck a few of them under the chicken if you don't want them to brown too much. Roast for 35 minutes.
- Remove pan from oven. In a small bowl whisk together the orange juice and honey and brush over chicken. Return pan to oven and continue to roast for about 10 minutes or until chicken is golden and cooked through.
- Serve with rice, pasta or a grain.

Have to admit I added a couple things....touch of curry and rosemary...and 1/2 c chicken broth.

I wouldn't change the time, unless the breasts are really big, and then I would add about 10 minutes.

You say 3 oranges or tangerines, but how many tangerines do you use? Since oranges are bigger I'm pretty sure you use more than 3 tangerines. Also the title of the recipe is Chicken with tangerines so why not put the quantity of tangerines instead of oranges. If they are he same quantity let me apologize in advance.

The recipe is very flexible, you could use anywhere from 3 - 6 tangerines.

I’m not a cook, however I see myself using sweet potatoes in this recipe. I still use the fruit juices. (Experiment) I’ll let you know how it comes out!🙂
