Ingredients.
- Shrimp - you want large shrimp, in the shell, cleaned and deveined.
- Extra virgin olive oil - this adds flavor, so use a good one.
- Lemon - zest first and then squeeze.
- Garlic.
- Thyme - or your favorite herb - I've used lemon thyme, rosemary and marjoram.
- Salt and pepper.
Step by step instructions.
Preheat oven to 425°f.
Zest the lemon and squeeze the juice into a large bowl.
Mince the garlic and add it to the bowl.
Coarsely chop the thyme and add it to the bowl, along with a pinch of salt and pepper.
Add shrimp to the bowl and toss to combine.
Spread the shrimp out on the baking sheet and roast for 4-8 minutes or just until pink, you don't want to overcook it.

Ingredients
- 1 ½ pounds shrimps large, deveined
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh thyme coarsely chopped
- ½ teaspoon lemon zest
- 2 teaspoons lemon juice fresh squeezed
- 2 cloves garlic finely chopped
- ¼ teaspoon salt
- fresh ground black pepper to taste
