    Herb Roasted Lemon Garlic Shrimp

    This Herb Roasted Lemon Garlic Shrimp is a favorite at our house and soon to be a favorite at yours!

    Shrimp gets a quick toss in a flavorful mix of olive oil, thyme, lemon zest and juice, and garlic. Spread it on a sheet pan and roast until perfectly plump and delicious.

    If you're looking for the easiest shrimp recipe, this is it! Simple ingredients with maximum flavor!

    You can use these perfectly roasted lemony, herby, garlicky shrimp as an appetizer or serve them with a salad and bread for a light and delicious dinner!

    This is the shrimp recipe you'll turn to time and time again!

    Ingredients.

    • Shrimp - you want large shrimp, in the shell, cleaned and deveined.
    • Extra virgin olive oil - this adds flavor, so use a good one.
    • Lemon - zest first and then squeeze.
    • Garlic.
    • Thyme - or your favorite herb - I've used lemon thyme, rosemary and marjoram.
    • Salt and pepper.

    Ingredients for shrimp marinade.

    Preheat oven to 425°f.

    Zest the lemon and squeeze the juice into a large bowl.

    Mince the garlic and add it to the bowl.

    Coarsely chop the thyme and add it to the bowl, along with a pinch of salt and pepper.

    Shrimp in a bowl tossed with marinade ingredients.

    Add shrimp to the bowl and toss to combine.

    Spread the shrimp out on the baking sheet and roast for 4-8 minutes or just until pink, you don't want to overcook it.

    Yes, it's that easy and oh so good! The zing from the lemon, the savory flavor from the garlic and the fresh flavor from the herbs.

    This recipe proves that cooking doesn't have to be complicated! Take simple, fresh ingredients, cook them perfectly and you'll have people begging for more!

    You can toss this shrimp with some buttered pasta, use it on top of a salad - it would be great on this Herb Salad, or pile it up on a platter as part of an appetizer tray!

    Shrimp is tossed in an herby, lemony and garlcky olive oil and then quickly roasted until plump and juicy!

    Ingredients

    • 1 ½ pounds shrimps large, deveined
    • 3 tablespoons extra virgin olive oil
    • 1 tablespoon fresh thyme coarsely chopped
    • ½ teaspoon lemon zest
    • 2 teaspoons lemon juice fresh squeezed
    • 2 cloves garlic finely chopped
    • ¼ teaspoon salt
    • fresh ground black pepper to taste

    Instructions

    • Preheat oven to 425°f.
    • Toss shrimp in a large bowl with the rest of the ingredients.
    • Place the shrimp on a baking sheet and roast until just pink, about 5-8 minutes.

    Notes

    Can substitute any fresh herb - marjoram and rosemary are favorites.  
    This makes a great appetizer too!
