Easy Salmon Recipes
Even though I am retired, I stay busy with this blog and my photography business, so I still look for easy recipes. I also try to eat salmon once a week because it is so good for you. This leaves me on the lookout for easy salmon recipes. Broiling salmon is so easy, it only takes about 6 minutes.
You can also sear salmon, grill salmon, or roast salmon. I haven't tried poaching yet, but that's next on my list.
Lentil Salad
Just how gorgeous does this recipe look?! And it was every bit as good as it looks! I first found the lentil recipe. Big confession - I don't really like lentils. I try and I try. Well, there is no more need to try, this salad recipe was excellent.
Not just good, excellent. Turns out that maybe I don't like them in soups, but in a fresh tasting salad like this, divine! It suggested serving it with the Salmon Broiled with Lemon - and who I am to argue with a suggestion like that. Even Mr. Sidewalk Shoes commented on how good this all was.
The best lentils for this salad are green lentils - do not use red lentils. Red lentils get too soft, making them perfect for a creamy soup, but not a salad.
This lentil salad would also make a great accompaniment to this Oven Braised Buttermilk Chicken or this Braised Chicken with Olives, Capers and Prunes.
Salmon Broiled with Lemon and Green Lentil Salad
Ingredients
Green Lentil Salad
- 1 cup lentils green
- 3 tablespoons extra virgin olive oil
- 1 ยฝ cups shallots thinly sliced
- ยฝ cup roasted red peppers cut into strips
- 3 ยฝ tablespoons sherry vinegar
- 3 tablespoons fresh parsley coarsely chopped
- salt
Salmon Broiled with Lemon
- 1 ยฝ pound salmon filet
- 2 tablespoons olive oil
- 3 tablespoons lemon juice
- salt and black pepper
- ยผ teaspoon paprika
- 1 lemon sliced
Instructions
Green Lentil Salad
- Pick through the lentils, rinse and drain. Bring a pot of 3 cups of water to a boil. Add the lentils, reduce the heat, and simmer for about 18-25 minutes or until tender.
- While the lentils are cooking. Heat 2 tablespoons of the olive oil in a small skillet over medium-high heat. Add the shallots and cook for 2-3 minutes. Reduce the heat and continue to cook for about 5-8 minutes.
- Drain the lentils and add to a bowl. Stir in the peppers, vinegar, parsley, ยฝ teaspoon salt, shallots and remaining 1 tablespoon of olive oil. Serve warm or at room temperature.
Salmon Broiled with Lemon
- Remove skin and bones from salmon and cut into 4 portions. Brush both sides with olive oil and drizzle with lemon juice. Sprinkle with salt, pepper, and paprika.
- Preheat the broiler. Broil the salmon 4-6 inches from the heat for about 6-8 minutes. Remove from the oven and immediately top with lemon slices. Serve with lentil salad.

Oh man, I love lentils and that salad looks delish! I've found I don't like lentils when they are cooked like soup beans, meaning seasoned with broth, salt, and pepper. They taste too much like soup beans. Imagine that, LOL. I'm your opposite, because I seem to like lentils better in soups ๐

I've gotten some great cookbooks at some of those stores, Pam. Must have missed this one, lol...The salmon looks delcious. I actually made salmon for dinner tonight. Sure wish I would have been able to make it to this post sooner, the lentils are a GREAT idea!
