    Looking for an easy weeknight dinner?  In this Seared Salmon with Mango Salsa Salad a simple seared salmon rests atop a bed of greens and topped with a fresh mango salsa!

    Easy Summer Salad

    This is the start of what is going to be a series.  A series of salads.  Of course, I have no idea if that will actually happen, my track record of proposing things and then actually completing this is rather dismal.   I have a habit of declaring things.   Anyone remember the time I declared "The Summer of Cleaning Out my Garage" - yeah, that so didn't happen.  And then there was "The Summer of Herbs" - where I was going to be diligent in using my herbs from my garden - yeah, that didn't happen so much either.  So, we'll just have to see if this "Summer of the Salads" will happen.

    Seared Salmon with Mango Salsa Salad

    Here's the gist of it.  I plan on taking a sort of salad formula and working my way through the different variations, creating salad recipes that are easy to follow and easy to tweak to your tastes.   I love salads.  I especially love salads with a bit of protein in them.   They are easy one bowl meals that fill me up and make me feel good about myself.  My basic formula is some sort of salad greens, topped with a lean protein, and then finally topped with a sort of salsa.  The perfect one dish meal with endless variations!

    You could easily change this to a more substantial meal by serving the mango and salsa over a whole grain.

    Seared Salmon with Mango Salsa Salad

    A simple seared salmon rests on your choice of greens and topped with a fresh mango salsa in this Seared Salmon with Mango Salsa Salad

    Ingredients

    Salmon

    • 2 salmon fillets
    • olive oil
    • salt and pepper

    Salsa

    • 1 mango , peeled and diced
    • ¼ red onion , diced
    • 2 tablespoons chopped fresh cilantro
    • juice of one lime
    • 2 teaspoons olive oil
    • 1 jalopeno pepper , sliced

    Salad

    • 4 cups salad greens
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • salt and pepper

    Instructions

    • Heat a frying pan over medium high heat with a little olive oil. Place salmon flesh side down and sear for 3 minutes, turn and finish cooking for about 3 more minutes. Remove from heat.
    • Place salsa ingredients in a medium bowl and toss to combine.
    • Divide salad greens between two bowls. Place lemon juice, olive oil and salt and pepper in a small jar and shake to emulsify. Pour over salad greens and toss lightly in bowls. Place a salmon fillet on top. Top the salmon with the mango salsa.

      LOL I'm totally the same way with making declarations and then sadly not following through. BUT this salad looks so delicious (love the salmon and mango combo!) that I think you NEED to follow through on this one! Can't wait to see what you come up with next 🙂

      I too have been thinking I want more salads, main course entree salads. They are huge here in Italy and I love some of the combinations more than I would have expected. I would definitely dig in to yours--I adore mango salsa!

      I just picked up some magically marked down salmon at the grocery store yesterday, thinking that I wanted to try and grill it, but then not sure what to do next. I love the idea of this salad--it looks terrific for a Spring/summer meal, and yes, an excellent way to get those farm share greens out of the fridge!
