Classic Southern side dish.
I hesitated to post this super simple, but super delicious side dish on the blog. I mean it's got only 3 ingredients and is ready in 5 minutes.
But then I remembered my Skillet Fried Potatoes. I also hesitated with those. A childhood favorite that I've been making all my life. Turned out to be one of the most popular posts!
Everyone loves corn.
I understand that broccoli may not be a beloved vegetable, but have those people tried my Honey Mustard Broccoli Salad?
And yes, asparagus may be an acquired taste, but again, perhaps those people haven't tried Parmesan Roasted Asparagus?
But corn... everyone loves corn. From toddlers to adults, I don't think I've ever met anyone that didn't love corn.
Ingredients
Consider this recipe a base recipe. As it is made, it is only 3 ingredients (I didn't count salt and pepper.)
- Corn - I used fresh corn that I got from my CSA (these photos are from last summer, that's how behind I am!) While I love fresh corn side dishes, this is also delicious when made with frozen corn or drained can corn.
- Green bell pepper - you can use red, yellow or orange. I find green so much easier to find (and cheaper) so that is what I usually use.
- Butter - yes, you could use olive oil. But butter and corn are a match made in heaven!
Variations
This recipe is so easy to make your own. You could add:
- Onions
- Hot Peppers
- Honey (even hot honey)
- Sugar
- Bacon Fat - instead of butter.
- Garlic
Step by Step Instructions
If using fresh corn, stand the corn on it's end and use a sharp knife to cut the kernels off the corn. I like to do it on a dish towel, it keeps the kernels from going every where!
Dice the green bell peppers, I like to dice them small, so that they are roughly around the size of the corn.
Melt the butter in a skillet (preferably cast iron) over medium heat.
When the butter has stopped foaming (this is your clue that it is hot enough to start sautéing) add the green bell pepper and cook for about 3 minutes.
Add corn to the bell peppers and stir to combine, season with salt and pepper.
Cook stirring occasionally for 5-10 minutes. I prefer my corn cooked about 5 minutes, if you want it softer, cook for the longer time.
Taste and adjust the seasonings.
This is the perfect summer side dish, though with frozen corn or canned corn you could make it all summer long.
I have even made it on the grill and on my smoker!

Skillet Corn with Peppers
Ingredients
- 4 cups corn preferably fresh from the cob
- 1 green bell pepper
- 3 tablespoons unsalted butter
- salt and pepper to taste
Instructions
- If using fresh corn, use a sharp knife to cut the kernels off the cob. If using frozen, no need to thaw, just add a few more minutes to the cooking time. If using canned, drain the corn.
- Dice the green bell peppers, a small dice just slightly bigger than the corn.
- Melt the butter in a skillet over medium heat.
- When the butter stops foaming, add the bell pepper. Cook for about 3 minutes, stirring occasionally.
- Add the corn, sprinkle with salt and pepper and cook stirring occasionally for 5-10 minutes.
- Taste and adjust the seasoning.
