Take chicken wings to a whole new level by smoking them!
We used our Traeger Grill, but this technique works on any wood pellet smoker!
Chicken wings are so fast and easy when you use your wood pellet smoker! If you search for recipes for smoked chicken wings, you'll see that a lot of people use a two step process. First they slow smoked them at a low temperature and then crank up the heat to crisp the skin, but that can take up to 3 hours!
I've done that and it's good, but personally I like just putting my wings on the smoker and letting them do their thing, and it only takes about 35-45 minutes.
So, if you're looking for fast and easy chicken wings, you've come to the right place!
Ingredients.
- Chicken wings - I usually serve about a pound per person if I am serving it with lots of side dishes. However if you have people with healthy appetites, you'll want to go up to 1.5 - 2 pounds per person.
- Rubs, marinades, brines - you can use your favorite rub, marinade or brine - here's a collection of my favorites - 20 Marinades, Brines and Rubs.
- Baking powder - this is the secret ingredient to crispy skin! If you are doing a rub, just include it with the rub. If you've brined or marinated, after draining and patting the wings dry, use the baking powder along with whatever other seasonings you are using. I use 1 teaspoon per pound of chicken wings.
- Sauces - you can optionally toss the chicken wings in a sauce after they are smoked. We love the buffalo sauce from our Crispy Baked Buffalo Chicken Wings.
Step by step instructions.
For these wings, I used my The Best Dry Chicken Rub and added 4 teaspoons of baking powder because I used 4 pounds of wings.
Place the wings in a bowl and toss with the rub/baking powder combination.
Lay the wings on a rack to dry the skin, while you preheat the grill to 375° F.
Use your favorite pellet flavor - I like to use this Best Pellets for Smoking Guide.
Place wings on the grill and cook them for 35 minutes. Turn them once halfway through. Honestly - sometimes I turn them and sometimes I don't! Since there isn't a flame below them and the Traeger cooks like a convection oven, the hot air circulates around them. So, if you forget to turn, don't worry about it!
You usually cook chicken to 165°F, however I like the texture of wings when they are cooked to 175°F, they are so tender then!
Take them off the smoker, toss with your favorite sauce or enjoy them as is!
These are so good! You can see that we enjoyed ours plain. Sometimes we toss them in a sauce and sometimes we just eat them plain.

Smoked Chicken Wings
Ingredients
- 4 pounds chicken wings
- Chicken Rub optional
- 4 teaspoons baking powder
- salt and pepper
Instructions
- Pat wings dry. Toss wings with salt, pepper and baking powder. If using optional rub, add the baking powder to the rub.
- Place wings on rack on baking sheet to dry and come to room temperature, while you preheat the grill to 375°F.
- When grill has finished preheating, place wings on the grill and grill for 35 minutes or until temp reaches 175°F. Turn wings halfway through cooking.
- Remove wings from grill and toss with sauce or serve as is!
