These easy wood-pellet smoked chickpeas are so versatile! They make a great appetizer, use them on salads, and sprinkle them anywhere you want a delicious smoky flavor!

I don't know about you, but I love finding new ways to use my Traeger wood pellet grill. And, I think these might just be my favorite!

I love chickpeas, I use them in my Instant Pot to make an Instant Pot Chickpea Mediterranean Bowl and as a side dish in Lemon and Thyme Chickpea Salad.

Who would have thought smoked chickpeas (or garbanzo beans) would be so amazing?

    Instructions.

Close up of garbanzo beans on a cookie sheet, drizzled with olive oil and salt and pepper.

I knew that I wanted a more smoky flavor over crispness, so I set the smoker to 225°f.

I also wanted to make sure the smoky flavor came through, without anything else adding something to it. So, I chose to simply drizzle them with olive oil and sprinkle them with salt and pepper. I plan on trying other spices as I make these again (and I will be making them again, and again, and again!)

I used two cans of chickpeas, drained and rinsed. Spread them out on a baking sheet, drizzled with olive oil, salt and pepper, and tossed to coat!

Chickpeas on a tray and chicken breasts on a rack in a Traeger grill.

I placed the chickpeas in the Traeger, along with two chicken breasts and smoked them for one hour.

Smoked chickpeas which have browned from being smoked.

Look at all that gorgeous color! Since I smoked them at a low heat, they did not come out crunchy. If I was using them as a snack, and wanted them crunchier, I would probably finish them off at a higher heat. But since I was using them in a salad, I wanted a softer texture, and they were still great for snacking!

These were amazing. The chewiness, the smokiness, they could easily substitute for meat in a recipe. It really felt like you were eating barbecue!

Bowl with chicken breasts, chickpeas, beets and goat cheese.

I served them along with the smoked chicken breasts in a salad with roasted beets and goat cheese, all drizzled with a balsamic dressing.

Using the wood pellet grill for meal prep is going to be a game changer! I plan on smoking chicken breasts and using them in salads, bowls, quesadillas, whatever!

The smoky chickpeas are going to be perfect for salads, bowls, and snacking!
