    Smoked Paprika Chicken and Chorizo Bake

    Chicken, chorizo, olives, and lemons roast together in one pan for an easy and delicious meal!

    Just look at all that lovely char on those lemons! This recipe for baked chicken and chorizo is so simple yet amazing!

    The chorizo becomes crispy, the chicken crispy and juicy, the lemons become charred and sweet, and even the olives get a little crispy.

    Ingredients.

    Chicken - you can use any combination of pieces you'd like. You want about the equivalent of a whole chicken - or about 8 pieces. I found some whole leg quarters and cut them into drumstick and thigh portions.

    Lemons - since you are using the peel, I recommend organic lemons. If not using organic, be sure and scrub them well.

    Black olives - kalamata olives will give you much more flavor than regular canned black olives.

    Chorizo - for this recipe, you want Spanish chorizo, which is a a dried cured sausage, instead of Mexican chorizo which is a fresh sausage.

    Paprika - you want to use a good smoky paprika here. There are hot and mild varieties so your choice.

    Chicken stock - a homemade stock is always a good choice, but a carton stock will be fine.

    Garlic, butter, and salt and pepper.

    Instructions.

    This recipe for baked chicken and chorizo couldn't be any easier!

    Preheat oven to 400°f.

    While the oven is preheating, slice the lemons and the chorizo.

    Separate the garlic cloves, but don't peel them. Melt the butter.

    Place the chicken, lemons, chorizo, olives and garlic in the pan. Pour over the chicken stock and the melted butter. Sprinkle everything with the paprika and salt and pepper! The chorizo gets very crispy, if you want it to stay more chewy, nestle it a bit under the chicken or lemon slices.

    Roast for 40-60 minutes or until the chicken is cooked to 165°f. Mine took about 45 minutes. If you are using big bone-in breasts, you will be on the longer side of the cooking, small drumsticks will be on the shorter side.

    Ingredients

    • 1 whole chicken cut up or combination of pieces about 8
    • 1 lemon sliced
    • 1 cup pitted black olives
    • 2 chorizo sliced
    • 4 cloves garlic unpeeled
    • 1 cup chicken stock
    • 4 tablespoons butter
    • ½ teaspoon smoked paprika
    • sea salt and fresh ground black pepper

    Instructions

    • Preheat the oven to 400 f. 
    • Place the chicken, lemon, black olives, chorizo, and garlic into the roasting pan.
    • Pour over the stock and the butter. Sprinkle with the paprika and salt and pepper.  Roast for 40-60 minutes.

    Notes

    Since you are using the lemon peel, organic lemons are suggested.
    Chorizo - this recipe uses Spanish chorizo, which is a cured sausage, not Mexican which is a fresh sausage. 
    Kalamata olives will have more flavor than regular canned black olives.

      That looks delicious, all of my favourite things in one pan, well apart from olives, I really dislike olives but I am sure you will forgive me for omitting them 😀

      Chicken, chorizo, olives, lemon & paprika - this is the ultimate flavour combination. Add a bit of Donna Hay flair for turning all that into a one-pan wonder that comes together in a very short space of time, and this dish looks like an absolute winner.

      I have cooked with chirozo. Always thought it would be too hot. This looks so good so I will have to get some next time I visit WM!. ANd I will have to check out Donn'as ipad app. She has such good recipes.

      Anything with chorizo always catches my attention too. I can see how the fatty chorizo goes well with the brine of the olives and the brightness of the lemon. Not only does it look comforting but it also seems perfectly balanced in flavor.

      So, now we know the awful truth. Your ipad wasn't to make you hip or with-it; your ipad is a cookbook. While you'd told me that, now you've admitted it to the world, and we'd all better get clicking those Amazon links a lot harder to pay it off for you! And I don't know what a chorizo is, but the rest of the recipe sounds really good.
