Chicken, chorizo, olives, and lemons roast together in one pan for an easy and delicious meal!
Just look at all that lovely char on those lemons! This recipe for baked chicken and chorizo is so simple yet amazing!
The chorizo becomes crispy, the chicken crispy and juicy, the lemons become charred and sweet, and even the olives get a little crispy.
Ingredients.
Chicken - you can use any combination of pieces you'd like. You want about the equivalent of a whole chicken - or about 8 pieces. I found some whole leg quarters and cut them into drumstick and thigh portions.
Lemons - since you are using the peel, I recommend organic lemons. If not using organic, be sure and scrub them well.
Black olives - kalamata olives will give you much more flavor than regular canned black olives.
Chorizo - for this recipe, you want Spanish chorizo, which is a a dried cured sausage, instead of Mexican chorizo which is a fresh sausage.
Paprika - you want to use a good smoky paprika here. There are hot and mild varieties so your choice.
Chicken stock - a homemade stock is always a good choice, but a carton stock will be fine.
Garlic, butter, and salt and pepper.
Instructions.
This recipe for baked chicken and chorizo couldn't be any easier!
Preheat oven to 400°f.
While the oven is preheating, slice the lemons and the chorizo.
Separate the garlic cloves, but don't peel them. Melt the butter.
Place the chicken, lemons, chorizo, olives and garlic in the pan. Pour over the chicken stock and the melted butter. Sprinkle everything with the paprika and salt and pepper! The chorizo gets very crispy, if you want it to stay more chewy, nestle it a bit under the chicken or lemon slices.
Roast for 40-60 minutes or until the chicken is cooked to 165°f. Mine took about 45 minutes. If you are using big bone-in breasts, you will be on the longer side of the cooking, small drumsticks will be on the shorter side.
The combination of the chorizo, the black olives, and the lemon is outstanding.
