Making these spicy beef lettuce wraps on your Blackstone Griddle is so easy!
They are a lighter healthier option for people who don't want the same old burger!
I have wanted a griddle for so long, but my deck was full with my Traeger and my regular grill. However, when I saw that I could get a Blackstone griddle for a great price at Walmart, I gave my grill to my neighbors and set up the griddle on the deck!
It was love at first sight or love at first cook! I tried fried rice, quesadillas, and hibachi chicken. Then I decided that maybe I should start taking some photos of my Blackstone griddle recipes and get some of them up here on the blog!
This brings us to my first griddle recipe on the blog - Spicy Beef Lettuce Wraps! I absolutely loved making them on the griddle. No smoke in the kitchen, no greasy splatter mess on my stove!
Ingredients.
- Ground beef - could also use ground pork or ground chicken.
- Green onions - or regular onions minced.
- Cilantro - fresh. You could also substitute mint.
- Hot peppers - I used Thai bird's eye chilies. You could use any hot pepper that you like. Scrape out the seeds and membrane if you want it milder.
- Limes - you'll be using the juice of two limes.
- Fish sauce - you can substitute soy sauce, but it will have a completely different flavor. Check out my round-up of Fish Sauce Recipes for other ways to use your fish sauce!
- Sugar - use regular white, brown or cane sugar.
- Lettuce - for the wraps. I like to use bibb lettuce, but you could use any lettuce, cabbage, or even use this beef over rice.
Instructions.
Preheat the Blackstone Griddle on medium. I almost always preheat on Medium unless I'm doing something I know that I want to cook on high, like smash burgers or steak. Also, I have a 4 burner model, so it gets very hot. Just adjust your heat up or down depending on how things are cooking.
I also use an infrared thermometer to consistently check the temperature of the griddle (link in the recipe card). You'll find that certain areas of the griddle might run hotter, the temperature outside can affect the griddle temp. I tend to cook most of my food at 350-375°f.
While the griddle is preheating, make the sauce. Combine the fish sauce, chilies, onions, sugar, and lime juice in a small bowl and whisk to dissolve the sugar.
Chop the cilantro and get your lettuce leaves ready. This cook happens really fast, so you want to have plates or a platter ready to go!
When the griddle is hot, squirt a little oil on the griddle. I use avocado oil for cooking the griddle because it has a hotter smoke point. My ground beef was pretty lean, so I used a fairly good squirt. If your ground beef is fattier, you will need less oil.
Cook the beef on the griddle until well browned and most of the pink is gone. Adjust your heat if it is getting too hot.
Pour the sauce over the beef and toss it to soften the onions a bit and to marry the flavors. A minute or two is enough.
Add the cilantro and toss for another minute or so.
Remove the beef mixture from the griddle and serve in lettuce wraps or over rice if you prefer!

Blackstone Griddle Spicy Beef Lettuce Wraps
Ingredients
Sauce
- 2 chile peppers hot, finely chopped
- ½ teaspoon sugar
- 2 tablespoons fish sauce
- 4 scallions thinly sliced
- 2 limes juiced
Wrap
- 1 pound ground beef
- 4 tablespons fresh cilantro chopped
- 8 lettuce leaves
- avocado oil for cooking
Instructions
- Preheat the griddle at medium heat. If using a thermometer, you'll want it at about 375-400°f.
- While griddle is preheating, combine all the sauce ingredients in a small bowl and whisk to dissolve the sugar.
- When the griddle is hot, drizzle a little avocado oil and add the ground beef. Let it cook undisturbed for a couple of minutes, then flip and start breaking it up with your spatula. Cook until most of the pink is gone, which should take about 5-7 minutes total.
- Pour the sauce over the ground beef and toss to combine. Cook for about a minute or two to thicken the sauce sauce slightly and to soften the onions.
- Serve in lettuce wraps. Top with extra cilantro or green onions if desired.
