    Strawberry Freezer Jam

Don't take my word for it, you must make this easy and delicious Strawberry Freezer Jam.  No canning needed and ready in about 30 minutes!  You'll love pulling jars of this out of the freezer all year long.

3 jars of strawberry freezer jam with a carton of strawberries.

    No Canning Required

Don't get me wrong.  I have nothing against canning.  I love opening my pantry and seeing jars of Crisp Dill Pickles and my favorite pickled beets.   But I also love opening up my freezer and seeing gorgeous colored jars of freezer jam.

If I may be so honest, what I really love is the effort to output ratio in this freezer jam.

It takes 20 minutes, really, and the outcome is amazing. I don't know about you, but I frequently gauge my cooking by a ratio. The ratio of my effort vs. the outcome. A good recipe, in my opinion, should have an output that far outweighs my effort (or at least be well worth the effort).

This easy jam recipe wins on all counts.

How to make Strawberry Freezer Jam

Steps 1, 2, and 3 for making strawberry freezer jam.

Step 1 - To make crushing the strawberries easier, chop them and place in a large bowl.

Step 2 - Using a potato masher, crush the strawberries.

Step 3 - Crush until the all the strawberries are in small pieces.

Steps 4, 5, and 6 for making freezer jam.

Step 4 - in a medium bowl combine Freezer Pectin (I used Ball Freezer Pectin) with sugar.

TIP - you must use freezer or instant pectin.  Regular pectin requires more sugar and heat to set.

Step 5 - add sugar/pectin mixture to strawberries and stir for 3 minutes.

Step 6 - ladle into clean freezer jars, be sure and leave ½ inch head space at the top.  I used a canning funnel to make this job easier.    Put a lid on the jars and let sit for 30 minutes until thickened if you want to serve immediately, otherwise refrigerated for up to three weeks or or freeze up to a year.

Opened jar of strawberry freezer jam on a vintage tablecloth.

    Strawberry Freezer Jam

This freezer jam is so good!!   The strawberries taste like they were just picked.  They don't lose any flavor and just look at that gorgeous color!

I keep opening up my freezer and looking at the pretty jars!  I already have plans for lots more delicious jams!

I want to play with some flavor combinations, which is so easy, with this small batch recipe.

    Strawberry Freezer Jam

You're not going to know which you love more - how easy it is to make this freezer jam or how delicious it tastes - like fresh picked strawberries!

    Ingredients

    • 1 ⅔ cup strawberries hulled
    • ⅔ cup sugar
    • 2 tablespoons freezer pectin

    Instructions

    • Chop strawberries and place in a bowl.  Using a potato masher, even crush the strawberries.
    • In a small bowl, whisk together the sugar and the pectin.
    • Add pectin/sugar mixture to strawberries and stir for 3 minutes.
    • Ladle into jars, leaving ½ inch headspace at the top,  and cap.
    • Ready to eat in 30 minutes.

    Notes

Be sure and leave ½ inch headspace to allow for expansion in the freezer.
Use pectin specifically labeled as freezer pectin or instant pectin.  Regular pectin requires more sugar and heat to set up.

I just nade strawberry jam and used Sure Gelrecipe that came in the box. They have to have made a mistake on the amount of sugar that they call for!!! It was 2 cups of strawberries,4 cups of sugar and one pkg of sure gel pectin. What is wrong with this recipe. My jam turned out like nothing but sugar,It will all go in the garbage and I will try this recipe!!!!

i made strawberry freezer jam this weekend and after the 24 hours I went to put them in the freezer and I noticed some of them the lids didn't seal (like they still pop when pressed)...is this OK for the freezer jam since we are freezing it anyway?

Yes, it's fine, they won't seal like they would with canning.

My mom used to make it all the time when I was a child! I will never forget the aroma in the house when you open a jar with this jam in the middle of the winter and it smells like summer again! Love it!

I'm going to freeze a lot more than 3 bags of strawberries. I had to stop back and double check this pectin, because I may make some jam for "the rest of ths household" (and not fussy Mom) this weekend.

Paula - the jar lids are for freezing or storage. I love them.

Carla - I plan on trying this with other fruits too!

Sandi - that's if it lasts until winter!

Marjie - you don't like jam!

What an entertaining review! And your jam looks luscious!!! My Mom used to make this exclusively with her fresh picked fruits (raspberries, blueberries, peaches, etc--you're right!!! Its just about the closest thing to heaven. Put one in the freezer next to your basil to break out one cold winter day!!! OH!!!

Wow-wow-wow! There's nothing like fresh homemade strawberry jam. I've not heard of no-cook jam before! Are those a new kind of lid on your jars? I really want to make this ... now I just need to keep my family at bay otherwise they'll eat the strawberries before I can use them!
