Chicken Salad in Lettuce Cups

Tart dried cherries add a sweetness to this Chicken Salad in Lettuce Cups - so easy when made with rotisserie chicken.

Ingredients

  • ¼ cup walnuts toasted, chopped
  • ¼ cup mayonaise
  • ¼ cup yogurt
  • 2 teaspoons sherry vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 cups chicken cooked, shredded
  • 2 tablespoons flat-leaf parsley fresh, chopped
  • 6 green onions , white and light green parts, chopped
  • 6 Bibb lettuce leaves
  • cup dried cherries tart

Instructions

  • Combine the mayonnaise, yogurt, vinegar, salt and pepper in a large bowl. Add the chicken, parsley and onions. Toss to combine. Place a lettuce leaf on each plate and divide the chicken salad among the plates. Top with the cherries.

Notes

Can be made with other dried fruits or even fresh fruit. 
Other nuts, such as pecans, sunflower seeds, and pumpkin seeds.
