Ingredients
10ouncesfruit cakeor other holiday cake or moist bread
1tablespoon dark rum
7.5ouncesdark chocolatemelted
7.5ouncesdark chocolatemelted for dipping
cocoa for dusting
Instructions
Place the fruit cake and rum in a food processor. Process until combined. Place in a bowl and pour over the 7.5 ounces of dark chocolate. Mix to combine. Refrigerate for 30 minutes - don't go any longer because the chocolate will become too firm to shape.
Shape into 1 ½ inch balls. Using two forks, dip the truffles into the melted chocolate. Place on a lightly greased wired rack placed on top of a baking sheet lined with non stick baking paper. Refrigerate one hour or until set.
