Chicken Waldorf Salad
This salad comes together in minutes using leftover cooked brown rice and rotisserie chicken. Makes a great lunch salad or an easy, light dinner.

4 cups brown rice cookded 2 apples cored and diced 3 stalks celery sliced 3 cups breast meat from a rotisserie chicken, diced ½ cup walnuts toasted 2 ½ tablespoons extra virgin olive oil 2 ½ tablespoons lemon juice salt and pepper
Combine the rice, apples, celery, chicken, and walnuts in a large bowl. Place the lemon juice and olive oil in a lidded jar and shake to emulsify. Pour over the salad, season with salt and pepper and toss to coat evenly.
