Chicken Waldorf Salad
This salad comes together in minutes using leftover cooked brown rice and rotisserie chicken. Makes a great lunch salad or an easy, light dinner.
Servings 4 servings
- 4 cups brown rice cookded
- 2 apples cored and diced
- 3 stalks celery sliced
- 3 cups breast meat from a rotisserie chicken, diced
- 1/2 cup walnuts toasted
- 2 1/2 tablespoons extra virgin olive oil
- 2 1/2 tablespoons lemon juice
- salt and pepper
Combine the rice, apples, celery, chicken, and walnuts in a large bowl. Place the lemon juice and olive oil in a lidded jar and shake to emulsify. Pour over the salad, season with salt and pepper and toss to coat evenly.
